I’ve been craving a good Chicken Corn Soup 🍜 since I got back from Pakistan! And this recipe truly satisfied all my cravings! 🎯

Chicken Corn Soup Recipe

Chicken Stock (Broth)

For boiling the chicken:
• 1 lb chicken with bones
• 6–8 cups water
• Salt (to taste)
• Whole black peppercorns (about 6–8)
• Fresh garlic (3–4 cloves)
• Fresh ginger (1–2 inches)
• Saunf (fennel seeds) – ½ to 1 teaspoon
• Coriander seeds – ½ to 1 teaspoon

🍲 Ingredients for the Soup Base

For sautéing:
• Oil (1–2 tablespoons)
• Chopped ginger (1 teaspoon)
• Chopped garlic (1 teaspoon)
• Shallots (1–2, chopped)
• Lemongrass (a small pieces)

🍄 Vegetables & Add-ins
• Mushrooms (½–1 cup sliced)
• Corn kernels (fresh or canned – ½ cup)
• Shredded chicken (from earlier)
• Carrots (thinly sliced or julienned – ½ cup)
• Cabbage (shredded – ½ cup) optional
• Green chillies (sliced – 1–2)
• Cilantro (chopped – handful)

🧂 Seasonings & Sauces
• White pepper (¼ to ½ teaspoon)
• Crushed black pepper (¼ teaspoon)
• Fish sauce (optional – 1–2 drops)
• Salt (adjust as needed)

🥚 Thickening & Egg
• Corn flour (cornstarch – 2 teaspoons)
• Warm water (½ cup, to mix with the corn flour)
• 1 egg (beaten)

🌿 Finishing Touches
• Sesame oil (a small drizzle)
• Vinegar (1–2 teaspoons)
• Soy sauce (1–2 teaspoons)

My Tayyi Ami was holding our hands when we saw Kaaba 🕋 for the very first time. She asked us to look down the entire time we were in the Haram & asked us to look up when Kaaba was right in front of us. A memory I’ll never ever forget!
