💥💥Persian Chicken Kabobs

These Persian chicken kabobs (called “joojeh kabob” in persian) are one of my absolute favorite things on earth! The secret is an incredible marinade with lots of flavors that makes them juicy, tender, and so full of flavor.
.
These are best over charcoal grill, but you can also airfry the chicken for 20-22 minutes at 400F
.
Here is how to make them - instructions are for 2lb chicken. Double or triple as needed:
.
1.Lets start with the marinade. Add 1/8 tsp of saffron to a small bowl with small ice cubes and let it melt. Alternatively, you can dilute the saffron in hot water but letting melt on its own extracts optimal color/flavor. Let it melt while you move on to the next step.
.
2.Juice up some onions and garlic in a food processor. To juice the onion, you can use a food processor. Just process 1 medium yellow onion and 3 cloves garlic until its fully puréed/liquid. Grab a large bowl, put a strainer on top. Let it strain while you move on to the next step.

3.Add 2lbs of cubed chicken thighs to a bowl. Add a couple pinches salt, pepper, 1.5 tbsp dried oregano, 2 tbsp plain yogurt, the juice of 1 large lemon, and the melted saffron water (about 2 tbsp), and the juice strained away from the onion.
.
4.Give the chicken a good mix, ensuring everything is coated, then cover and let marinate for 2-6 hours, but ideally overnight.
.
5.When you’re ready to make them, skewer them up and grill on a charcoal grill, or if you dont have one, you can always use a cast iron or airfry them (about 20 mins at 400F).

6.I like to also grill up some tomatos, onions, and jalapeños along with the chicken.
.
7.When its ready, plate it up, top it up with some sumac, fresh herbs, and serve it up with more grilled veggies or base of choice (obviously rice would be amazing if you eat rice, but they’re just as good with veggies or even on their own). If you want a lowcarb rice option, you can even try it with my lowcarb Kaizen rice!

This pasta salad is TOP TIER!

Here is how I made it:
.
1.Let’s start with the bacon. You can use regular bacon, beef bacon, or turkey bacon. I used 8oz regular bacon. For easy cleanup my favorite way to make it is to lay out the bacon on a baking sheet and pop it into the oven at 400F for 20 minutes. It comes out perfect every time. Layout paper towel on a plate and add the bacon to cool off. This also removes excess fat.

2.Next, get your veggies washed, dried, and ready. I thinly shredded 1/2 Romaine Lettuce, 1 quart grape tomato cut in half, 1/2 medium red onion finely diced, and 1 avocado, cubed.
.
3.Then get your sauce ready. I made a homemade ranch of sorts. In a bowl, whisk together 3 tbsp mayo, 3 tbsp sour cream, 1/3 cup buttermilk, 2 tbsp apple cider vinegar, juice of 1/2 small lemon, 1/2 tbsp dried dill, 1/2 tbsp dried oregano, 1/2 tbsp onion powder, 1/4 tbsp garlic, a pinch of salt, pepper. Shake well, taste, and adjust.

4.Finally, cook up your pasta of choice. I used my high protein lowcarb pasta (Kaizen pasta). I brought some water to a rolling boil, added a few pinches of salt, then added the pasta and cooked it for 4.5 minutes. Once done, turn off the heat, drain the pasta and rinse it thoroughly with cold water to stop the cooking.

5.Then just assemble it all together. I added the pasta, the tomato, onion, avocado, lettuce, bacon, added the sauce, then squeezed the juice of half a lemon right before serving.
