Lentils Stuffed Eggplant
Ingredients:
2 large eggplants
1 tbs olive oil
1 brown onion, finely chopped
2 garlic cloves, crushed
1 tsp ground cumin
1 tsp ground paprika
1 cup boiled lentils
1 big carrot, finely chopped
3 tomatoes, finely chopped
2 tsp vegetable paste (check my previous recipe)
1.5 cups of water
Method:
STEP 1
Use a small sharp knife to score the cut side of each eggplant half in a diamond pattern (don’t cut all the way through). Slice to three pieces lengthways. Season with salt. Place, cut-side down, on a wire rack for 15mins.
STEP 2
Heat the oil in a frying pan over medium heat. Add the onion and carrot. Cook, stirring, for 5 mins or until onion is light golden. Add the garlic, cumin, paprika and cook, stirring, for 1 min or until aromatic. Add the lentils, tomatoes and paste, water and stir to combine. Bring to a simmer.
STEP 3
Preheat oven to 200°C. Line a large baking trays with baking paper. Pat dry the sliced eggplants with paper towel and place them cut-side up, on lined trays. Bake until they are soft and brown.
STEP 4
Top with lentil mixture. Bake for 15-20 mins. Transfer to a serving platter.
You can serve with chopped parsley or baby spinach leaves and finely chopped red chilli.
Swap me: For an easy twist, swap the eggplants for 4 large zucchini.

I didn’t feel like cooking a big dinner tonight so made this warm chickpeas salad instead. So easy and delicious. Would you like to try?
Here are the ingredients:
-1 cucumber
-1 tomato
-2 spring onions
-1/4 red onion
-1/4 cauliflower
-1 carrot
-1/2 orange pumpkin
-1 can chickpeas
Dressing:
-2 tbs tahini
-1/2 lemon
-1 mandarin or 1/2 small orange
- Salt
Put chickpeas, cauliflower, carrot and pumpkin in an oven tray and sprinkle with paprika. Bake for 20-25mins at 180C degrees.
Mix all vegetables in a bowl, pour the dressing and enjoy it!

A friend reminded me cumin tea a few weeks ago. I used to love this amazing drink. I like it with ginger, even more beneficial. I started drinking it again last week, every night after meals.
Main reason I drink is helping me with my digestion issues but its benefits are not limited with digestive health. Here are some of the other benefits:

2️⃣ Regulates blood sugar
3️⃣ Regulates blood pressure
4️⃣ Anti-inflammatory
5️⃣ Nourishes your skin
6️⃣ Aids in weight loss - I assume this is linked to healthy digestion
Try it yourself! See how you feel 👀
All you need is add one tablespoon of cumin seeds and few slices of fresh ginger to around two glasses of water. Bring this to boil and reduce it to half. Strain and drink this when lukewarm.

What can you do with vegetables that doesn’t look crisp?
Vegetable stock paste is a great way to . I love it in soups, pasta sauce and as a chicken marinade.
Here are the ingredients:
200gr celery
2 carrots
1 brown onion
1 fresh tomato
1 zucchini
2 garlic cloves
2 fresh basil, leaves only
2 fresh sage, leaves only
2 fresh rosemary, leaves only
8 fresh parsley, leaves only
100 gr Salt (preservation)
1 tbs olive oil
All you need to do is chop all the vegetables, put them in a pan with all the herbs, salt and olive oil and cook for 20mins until they are soft. Last step is to blend them and put in jars. It will last for months in the freezer. Why not give it a go!

It’s the pomegranate season 🎉. I grabbed a 1kg bag from the markets today. Today’s dinner includes endive salad with pomegranate 😍
Pomegranate is a powerful anti-inflammatory, full of vitamin C and antioxidant, and great brain food.
There are several ways of eating pomegranates. I love them in salads or in salad sauce. Also great to juice it 🥤.
