Welcome me back it has been since May 2022 since I've last post, I hope you all missed me, so sorry for the long time away, all I can say its LIFE it sends you to new places, some fun, exciting and challenging. Generally I've been well and hope the same for you. I am going to commit to at least one post a week.

Mum's "Veggie" choc cookies

Ingredients
¾ medium zucchini, finely grated
½ carrot, finely grated
1 cup spinach, finely diced
⅓ cup applesauce
½ cup maple syrup
1 tbsp ground flax seeds, mixed with 2 tbsp water to create a "flax egg"
1 cup all-purpose flour
½ cup rolled oats
½ tsp baking soda
½ tsp salt
¼ tsp cinnamon
¼ cup dark chocolate chips, vegan

Instructions
Preheat the oven to 200 degrees and line a baking sheet with parchment paper.
In a mixing bowl, combine the wet ingredients: zucchini, carrot, spinach, apple sauce, flax egg and maple syrup. In a separate bowl, combine flour, oats, salt and baking soda. Mix the wet with the dry until you have a batter with consistent texture all the way through. Carefully fold in the chocolate chips.

Brekky or lunch you decide??

Scrambled Pancakes

Ingredients:
1 egg
1/2 cup oats
1 banana

Toppings:
Cup mixed berries
2 tablespoons dairy free yogurt
1 tsp h**p seeds
Caramel sauce

Instructions:
In a large frypan melt a tablespooon of butter, then pour the batter onto the butter, frying it, 3 to 4 minutes on each side until golden brown.
With a fork or with a spatula chop up the resulting pancake.

Serve warm with mixed berries, yogurt, caramel sauce and h**p seeds.

Hi, lately I don't get to post much these days but I do hope you will enjoy this recipe..

Bagel Spice

1/2 cup poppy seeds
1/2 cup black sesame seeds
1/2 cup white sesame seeds
4 tps Himalayan salt
1/2 cup garlic granules
1/2 cup onion flakes

Instructions
No oil needed Pan fry for 5 mins. Till toasted and sesame seeds look golden brown.

Tips, goes well on salmon and veggies. Get creative and enjoy.

Chocolate & Berry Bliss Balls

It's been a while I'm so happy to be posting the latest recipe I have made so please enjoy.

Ingredients
60g goji berries"- for dusting
100g almond meal
30g pistchaio nuts
30g currants
2tbsp seaseme seeds
6 pitted dates
2 Tbsp raw cacao powder
2 tbsp pure maple syrup or agave nectar

Instructions
Place the goji berries in a high speed blender and blend to form a smooth dust store uncovered in the freezer overnight. This helps to make it easier to handle.

Line a baking try with baking paper

Place the almond meal and other ingredients listed in a food processor and process until well combined the mixture should be a little sticky. If not add a little water about 1-2 tablespoons.

Scoop out 1 tablespoon of mixture and roll it into a ball using wet hands. Repeat with the remaining mixture. To make about eight balls.

Refrigerate, when ready to use roll in goji
dust to serve.

Raw Cookie Dough

Get the kids in the kitchen, this is something
the kids can do!

Ingredients
1.5 cups almond flour
1/4 cup peanut butter
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1/4 cup maple/agave syrup
1/4 cup gluten-free, vegan dark chocolate chips or cacao nibs.

Instructions
Place all the cookie dough ingredients in a medium bowl and stir together until a dough forms. Perfect on smoothies as a cookie crumble, great as an energy ball.

Ingredients
1/2 cup frozen banana
1/2 cup frozen blueberries
1/2 cup frozen raspberries
1 1/2 cups coconut milk
2 scoops vanilla F1 or vanilla sports *herbalife
2 pitted medjool dates *optional
1 tsp almond butter

instructions
Place all the ingredients into a blender and blitz until smooth. Top with raspberries and blueberries and serve immediately. Dates, creates chewy bits, that are just simple, yum!!

Avocado Smoothie

Ingredients
Protein, I used Herbalife vanilla 2 scoops
Coconut Milk, 150 ml
Coconut Water, 100ml
Pistachio nuts crushed, 1 teaspoon
Banana, 1/2 "- Frozen
Avocado, 1/4"- Frozen
Vanilla Yoghurt 1 tablespoon
Ice

Instructions
Blend all ingredients in a high speed blender for two to three minutes.

Oatmeal Bars

Vegan banana oat bars.Tasty and easy
to make with only four ingredients.

Ingredients
2 cup Rolled Oats
4 Banana Medium sized ( measures 1 cup when mashed)
1/2 cup Almond Butter
1/2 cup Pecans

Instructions
In a mixing bowl add in the banana and mash well without any lumps. Next add in unsweetened almond butter then add in the rolled Oats.Finally add in the roughly chopped or crushed pecans. Fold everything together.
Prepare a 6 * 6 inch baking tray and line them with parchment paper. Transfer the prepared batter to the baking tray. Top them with whole pecans.Preheat the oven at 180 deg C and then bake at 180 Deg C for about 20 - 22 mins or till the toothpick when inserted comes out clean. Let it cool completely and then slice and serve.

It's a Mango-licous day, enjoy it is a fabulous one to try on a hot day and perfect after a workout.

Ingredients
Mango 1/2 frozen
Oats, 1/4 cup

I haven't been posting a lot lately work, has got me busy but I have been looking for new and exciting recipes. So I came across this, which lately it's been my favourite Go-to-Smoothie.

Chocolate Hustle

Instructions
Blend all ingredients in a high speed blender for two to three minutes.
