I’m so obsessed with this salad I’ve started lying to people and pretending I’m still recipe testing when they see yet another batch in the fridge.😅 Asian cucumber salads are the BEST!! Firecracker sauce + cooling cucumber = perfection.

The chilli crisp addiction continues!! (You’ve got the jar from the Chilli Crisp Noodles, right??) - N x ❤️

Spicy Smashed Asian Cucumber Salad

4 cucumbers (~20cm/8”, scale up/down for shorter/longer)
3/4 tsp cooking/kosher salt
1 eschalot/French onion (US: shallot), very finely sliced (sub ¼ red onion)
1 cup green onion, green part only finely sliced
2 tbsp+ chilli crisp (crispy chilli oil) – Laoganma is my fave
2 tsp white sesame seeds, toasted
DRESSING – whisk:
1 1/2 tbsp rice vinegar (sub any clear vinegar)
2 tsp soy sauce, all-purpose or light
2 tsp sesame oil

1. Bash cucumbers to burst open, cut in half lengthwise then into 2.5cm/1” chunks. Toss in salt, leave 30 min. Drain. Add everything else, toss, toss, toss until eschalot goes floppy. EAT!
