High-Protein Chocolate Mug Cake
A rich, soft, single-serve chocolate cake that's high in protein and ready in just a few minutes!
🥣 Ingredients
2 tbsp all-purpose flour
2 tbsp unsweetened cocoa powder
2 tbsp no-calorie sweetener
¼ tsp baking powder
2 tbsp liquid egg whites (or 1 egg white)
2 tbsp plain low-fat Greek yogurt
½ tsp vanilla extract
2 tbsp sugar-free chocolate chips
👩🍳 Instructions
In a microwave-safe mug, combine the flour, cocoa powder, sweetener, and baking powder.
Add the egg whites, Greek yogurt, and vanilla extract. Stir until the batter is smooth.
Fold in the chocolate chips.
Microwave on high for about 2½ minutes, or until the cake is set.
Run a knife around the edge and carefully remove the cake from the mug.
Let it cool completely before slicing.
🍫 Optional Topping
Mix a little PB2 powdered peanut butter with Greek yogurt or water until smooth and drizzle over the cake. You can also top it with sugar-free whipped topping or extra chocolate chips.
Makes: 1 serving
