I’ve found that people are eating more plant based foods for one or more of the following reasons.

💃🏼 health
🌳 environment
🐖 compassion for animals
💰 budget

In the end, what we put in our mouths is a very personal choice, so let’s not judge who eats what or why. Let’s just live and let live and respect each others’ choices.

The funny thing is, I’ve never judged anyone for eating meat and yet a few people (not many) have judged me for eating plants. It’s like they think I’m going to judge them for eating meat so they make a preemptive strike or something. It’s just weird.

If you’re committed to being healthy, get annual blood tests and monitor for things like cholesterol, B12, iron etc and adjust accordingly to find your optimal health. Only trust reputable scientific sources of information on health (eg your doctor or specialist) as there are so many fake “experts” out there. Check their qualifications and make sure they aren’t pushing a product they want to sell you. Exercise daily, stay connected socially and do what feels right to you.

Fatty streaks—the first stage of atherosclerosis—can be found in American children by age ten. Once we reach our 20s and 30s, these fatty streaks can turn into full-blown plaques. And, by the time we’re 40 or 50, these plaques can lead to heart attacks.

Fatty streaks may start to develop even before birth. Arteries of fetuses whose mothers had high LDL cholesterol levels are more likely to contain arterial lesions. This finding suggests that atherosclerosis may not just start as a nutritional disease of childhood, but during pregnancy.

It’s become commonplace for pregnant women to avoid smoking and drinking alcohol. It’s also never too early to start eating more healthfully for the next generation.

To drastically reduce LDL cholesterol levels, we need to drastically reduce our intake of three things: trans fat, which comes from processed foods and naturally from meat and dairy; saturated fat, found mainly in animal products and junk foods; and, to a lesser extent, dietary cholesterol, found exclusively in animal-derived foods, especially eggs.

Plant-based diets have been shown to lower cholesterol just as effectively as first-generation statin drugs, but without the risks. In fact, the “side effects” of healthy eating tend to be good—less cancer and diabetes risk and protection of the liver and brain. We explore this and more throughout How Not to Die.

I haven’t tried these but let us all know if you do and this lady looks like AI but the idea seems sound. I just doubt that “a little honey” would make them sweet enough. Also, the choc chips are likely to have sugar in them. To boost the taste I’d add more honey. To boost the health benefits I’d ditch the choc chips, add more honey and add cocoa powder and chopped walnuts to make brownie style cookies. Essentially using tinned chickpeas is just like using gram or chickpea flour but not as easy because the water in the tinned chickpeas adds moisture to a recipe and sometimes that’s good and sometimes that’s not so good (as per my last post!). Using chickpeas in a sweet recipe is a great health idea but I’m still looking for recipes that taste good. In my life, plant based recipes have to be in that sweet spot of being really healthy but also really yummy! Nothing less will do.

Loving my daily healthy mocha:

Hot version:

1/2 to 1 cup of plant based milk heated in microwave for about one minute
1 shot of espresso coffee
1 heaped teaspoon of cocoa powder
1 teaspoon of any kind of honey

Iced version:

Same as hot but use Manuka honey afyer adding the milk and before adding the ice (when the drink is room temperature so you don’t destroy the Manuka benefits with heat).

A super healthy breakfast:

1/4 cup rolled oats
Soy milk
2 teaspoons ground flax meal
Chopped Brazil nuts
Walnuts
Cinnamon
Chia seeds
Manuka honey
Diced apple

If you’re new to plant based baking and you aren’t a complete health nut like I am at times (ie you do eat sugar, margarine etc), I cannot recommend this lovely French baker who lives in NZ with her vegan hubby more highly. She keeps the recipes realistic for us non-chef types with limited time and they’re delicious. Try her lemon pound cake for example. I’ve also baked the peach streusel cake using the tin peaches and loved it. Another fav of mine is her blueberry muffins.
