Sharing a not so typical "paleo" meal, but is healthy & nutritious & for me this one is vegan.
"Quazzy Quinoa Paella"
Thin shreds of 1 capsicum
1 onion thinly sliced
1 corn cob kernels
Few cups of shredded cabbage
Couple cups of cooked Quinoa
Cumin seed powder
Coriander seed powder
Paprika
White wine vinegar
Semi cook quinoa & rinse thoroughly (may sub for normal rice, or next time I might try this with brown rice)
Heat some olive oil in a pan & add a teaspoon or so of the 3 spice powders. Add all the veg to the pan & cook through for 3-5min.
Add a good splash (sorry I don't really measure accurately) of white wine vinegar & let to simmer for another few minutes.
Put quinoa into a baking dish with a bit more olive oil, white wine vinegar & spices. May also add some salt & pepper now. Add to the quinoa the veg mix from the pan & stir through. If u have some veg or chic stock you can add a bit also to give some moisture for the quinoa to soak up. Only a small amount though, say half a cup.
Bake covered in the oven on med-high heat for half hr or so, or until the quinoa starts to soak up the liquid.

Pineapple & Coconut Muffins
One bowl and one whisk wonder:
whisk
3 x eggs
1/2 heaped teaspoon baking powder
1/2 cup coconut cream
2-3 tablespoons honey
1/2 cup drained pineapple
1/2 cup coconut flour
spoon into muffin tray, sprinkle with shredded coconut
cook at 160 until golden brown - approx 25mins

Roast - a gift that keeps on giving! Roast up twice the amount, enjoy the warm roast and have left overs for lunches and breakfast fry ups with kale, rocket, sweet potato.
Make life easy.......
Rolled rib roast beef and lamb leg roast are my all time favourites. Nothing fancy just cook the sucker until it reaches internal temp (I use a meat thermometer)
Eating this way is easy!
Beef Rib Stew - and all of it's beautiful smelliness, cooking in the slow cooker permeating every inch of the house. Nom nom nom.......
