I had such a wonderful summer, looking back on all my photos. I am grateful for all the fresh veggies, the beautiful flower, the meals, the pool time, the sun rollerblading hanging out with G ♥️♥️♥️.
🍂🥣 Cozy Roasted Garden Veggie Soup 🥣🍂
Perfect for this beautiful, foggy fall day! 🌫️🍁 I had a bunch of fresh veggies on hand and decided to turn them into the coziest, creamiest soup. And let me tell you… it turned out AMAZING! 😍
🌱 What I used:
• Green tomatoes
• Sweet potatoes
• White potatoes
• Carrots
• Red & yellow peppers
• Zucchini
• Celery
• Onion
• Lots of fresh garlic
• Olive oil
• Chicken stock
• 1 cup coconut cream
• Herb & garlic Philadelphia cream cheese
• Fresh Parmesan cheese
• Fresh basil 🌿
• Fresh parsley 🌿
✨ Seasonings: Thyme, smoked paprika, black pepper, salt, and a little red pepper flakes.
🔥 How I made it:
I chopped up all my vegetables, tossed them in olive oil and seasonings, then roasted everything until the veggies were tender and beautifully browned around the edges.
I added the roasted veggies to a pot with chicken stock and blended everything until smooth and creamy. Then I added the coconut cream, herb & garlic cream cheese and a generous amount of freshly grated Parmesan.
I finished it off with fresh basil and parsley and gave it one last blend. 🌿
The result was creamy, slightly sweet, a little tangy from the green tomatoes, garlicky and absolutely packed with roasted veggie goodness. ❤️
And of course, Gianna requested a grilled ham & cheese sandwich to go with hers today 🥪🧀 — because what’s a cozy bowl of homemade soup without a grilled cheese on the side? 😋
Perfect for a chilly, foggy fall day when you just want something warm, homemade and comforting. 🍂🥣
