A 5PM grocery run with two hungry kids… what could possibly go wrong 😂🛒

What I’m making for dinner tonight 🤍 A crispy chicken schnitzel sandwich with creamy homemade coleslaw — one of my favourite ways to turn leftover chicken cutlets into an easy, seriously delicious dinner.

Serve with homemade fries (or frozen fries for an extra-easy night ✨).

**CHICKEN SCHNITZEL SANDWICH**

🥪 **For the sandwich**
1 fresh bread roll
1 chicken cutlet/chicken schnitzel, warmed
Avocado oil mayonnaise
Dijon mustard
Horseradish

🥬 **Creamy Coleslaw**
½ cup avocado oil mayonnaise
2 tbsp apple cider vinegar
2 tbsp maple syrup
1 tsp Dijon mustard
Salt + pepper, to taste
Coleslaw mix/shredded cabbage

Mix the coleslaw dressing together, then toss with your cabbage until creamy.

Slice your roll and spread with mayo, Dijon and horseradish. Layer on the warm chicken schnitzel, pile on the creamy coleslaw, close it up and slice in half.

Easy, crispy, creamy + SO good. 🤍

There’s something so special about hosting this time of year. 🍂🤎

And I really believe the secret to creating a beautiful, memorable evening is in the little details.

A cozy meal simmering away, fresh bread in the oven, a thoughtfully set table, candles lit before everyone sits down… none of it has to be complicated or over the top. It’s all of those small touches coming together that make an ordinary dinner feel a little bit magical.

Those are the evenings that turn into traditions. The ones our families remember and look forward to year after year. And fall is the perfect season to slow down, gather around the table and create more of them. ✨
