I have been a fan of Larabars for a long time. The only thing that always bothered me is that Larabars are not necessarily high in protein. That might be fine if you're only looking for a quick energy source before a workout or during a hike, but they're not necessarily ideal after a workout when you should also focus on protein.

One of the trickiest things to make in the Vitamix blender is ice cream. The ingredients are typically frozen, there is very little (if any) liquid added, the friction of the blades produces heat, and the whole mixture is exposed to warm/hot outside temperatures (unless you’re making ice cream outside in the winter).
Making ice cream in an ice cream maker is quite a different story – the ingredients are already blended, the ice cream base is chilled (not frozen), and the churning happens in a controlled environment – a completely frozen freezer bowl.
So, is it possible to make Vitamix ice cream comparable to the churned version? Ice cream with a solid yet creamy texture, firm yet scoopable consistency, and a full body that is neither too airy not too dense? Yes, it is! All you need to know how different ingredients and techniques affect texture and consistency.

I haven’t met a person who wouldn’t love brownies. Classic chocolate, swirled with cream cheese, infused with mint, spiked with booze, topped with frosting … there are so many flavor combinations and each one brings something unique to the table. Even more important than the flavor seems to be the texture – dense-fudgy, soft-chewy, or fluffy-cakey. One isn’t necessarily better than the other, but it’s important to know how to achieve the result you’re after.
