Patriotic Strawberries
Ingredients
- 2 teaspoons shortening
- 24 strawberries, washed and dried
- 2 tablespoons blue colored sugar
- 1 (12 ounce) bag white chocolate chips

Preparation
Melt white chocolate according to package directions. You may need to add about 1 teaspoon of shortening to every 1 cup of white chocolate. When fully melted, dip berries into chocolate, about 1/2 way up. Then dip into blue sugar or blue sprinkles.

Let dry.

Rice Pudding
Ingredients
- 3/4 cup medium grain rice or short grain rice
- 1 1/2 cups water
- 1/4 teaspoon salt (heaping)
- 4 cups whole milk (I use 2%%)
- 1/2 cup sugar
- 1/2 teaspoon vanilla
- 1 egg, beaten
- 1 teaspoon butter
- 1 pinch cinnamon
- pinch nutmeg

Preparation
In a medium saucepan, bring 1 1/2 cups water to a boil.

Add rice, salt, and stir.

Simmer covered until water has been absorbed (approximately 15 minutes).

In another saucepan, stir in 1 1/2 milk, sugar, and 1 1/2 cups cooked rice, cook over medium heat

Stir constantly until thick and creamy, for 15 to 20 minutes.

Combine 1/2 cup milk, and beaten egg, then add to saucepan. Cook 2 minutes more, stirring constantly

Remove from heat,

Add in butter and vanilla.

Season with a pinch of nutmeg or cinnamon.

Serve warm.

Fruit and Yogurt Parfait Breakfast Tart
Ingredients
- 2 1/2 cups oats
- 1/2 cup sliced almonds
- 1/4 cup vegetable oil
- 1/3 cup honey
- 1 tsp vanilla extract
- pinch of salt
- 2 cups of Vanilla Yogurt
- 1 kiwi, sliced
- 1 tangerine
- 5 Blackberries
- 1/4 cup pomegranate seeds
- 6 strawberries

Preparation
Preheat oven to 350 degrees.

Mix together oats, almonds, oil, honey, vanilla and salt. Push that mixture into a (sprayed with cooking spray) 12-inch pie plate. Make sure to push from the center and then use your hands and fingers to form the outer crust evenly. Once done forming the tart crust, bake for 20 minutes. Set on a cookie rack and let cool for 30 minutes. Meanwhile, slice fruit to prepare for topping. Once the tart crust is cooled, scoop in and smooth out the yogurt layer. Finally, top with your fruit, working from the center out. Note: the tart will not serve in a sliced form. It will be messy as the yogurt is not set. Just enjoy the initial presentation and the flavor of the tart!

Beet Salad With Peppers and Lettuce
Ingredients
- 1 small beet, peeled and sliced
- 1 teaspoon fresh basil, finely chopped
- 2 cups red leave lettuce
- 1 tablespoon maple syrup
- 1 teaspoon olive oil
- 1 orange pepper
- 1 red pepper
- Handful of sunflower seeds

Preparation
Chop the peppers and lettuce into thin slivers. Chop the beets into circular discs, so that they remain the star of the salad and get their moment in the sun.

Mix all the salad ingredients.

Add the salad dressing just prior to serving.

Garnish with sunflower seeds.
