Strawberry season is here so we went picking! This delicious treat is for the kiddies. I used full fat coconut cream, touching of vanilla and maple syrup to make coconut whipped cream. Topped it with fresh strawberries and h**p hearts. 🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓

My pancake game is 👌🏼 look at the FLUFF on these!!! 😍
Ingredients:
1 cup of flour
1 tbsp coconut sugar (2or3😁)
1tsp cinnamon
1/4 tsp nutmeg
1/2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 cup vegan milk (I like coconut)
1 tsp apple cider vinegar
1 tsp vanilla
1 flax egg (1tbsp ground flax + 3 tbsp warm water)
Directions:
Make flax egg and set aside
Combine wet ingredients set aside
Combine dry ingredients
Get griddle/pan hot
Once flax egg is nice and gooey combine with wet ingredients
Add some vegan butter to the pan
Pour wet ingredients into the dry ingredients and stir just until its mixed (do not over stir!) while butter melts
Spoon in batter
Once bubbles appear on top of pancakes flip over
Then take them out and pour syrup, fruit, whipped coconut cream, nut better, whatever you like on them and enjoy!
Makes aprox 6 med pancakes

As per request my recipe for my ital macaroni pie. (Sorry Shaq I just kind of wing it so I'm giving guesstimation measurements 😁) 3/4 package of macaroni pasta
1 can of full fat coconut milk
1 cup of cashew milk
1 package each of mozzarella and cheddar shredded cheese
1 package of Nafsikas Garden smoked gouda shredded
3 tbsp green seasoning
2 tbsp ketchup
2 tbsp mustard
1 tbsp dehydrated garlic/3 cloves of chopped fresh garlic
1 tsp nutmeg
1/2 tsp salt
1 tsp black pepper
3 tbsp of vegan butter (earth balance)
1/2 cup cornflake crumbs
Cook macaroni al dente. Bring coconut and cashew milk with 1 tbsp of butter, garlic, green seasoning, ketchup, mustard, nutmeg, salt and pepper to a boil. Reduce heat to a simmer, add in cheese. Stir often to avoid burning. Remove from heat once cheese is melted.
Melt remaining 2 tbsp of butter. Remove from heat add cornflake crumbs, dehydrated garlic, salt and pepper.
Mix pasta with sauce. Top with crumble mix. Broil on high until top starts to brown. vital

Chocolate Zucchini Muffins from The Oh She Glows Cookbook. 😏
I used half the sugar and they were like light fluffy pieces of dark chocolate heaven. 🤤😊 I also made a vegan vanilla butter cream and turned them into cupcakes...they didn't last long enough to take pictures. 🙊

Banana Oat Muffins
1 1/2 cups all-purpose flour
2 Teaspoons baking powder
1/2 Teaspoon baking soda
1/2 Teaspoon salt
1/4 Teaspoon nutmeg
1 cup quick oats
1 tbsp maple syrup
1 1/2 cups very ripe bananas
1/4 cup vegetable oil
1 flax egg
1/2 cup vanilla coconut yogurt
Preheat oven to 350°. Pre grease a mini muffin tin (or use paper liners). Combine all wet ingredients and whisk together, add in oats. Combine all dry ingredients and mix. Combine wet and dry ingredients only mixing enough so that all ingredients are wet. There should be clumps, do not over mix! Spoon in batter (you can be generous these dont rise much) bake for 13-15min.

I just winged it so I have no measurements but they contain:
Coconut oil, 2 bananas, 2 flax eggs, peanut butter, vanilla, maple syrup, cinnamon, h**p hearts, oatmeal, unsweetened shredded coconut, coconut flour, cranberries and pumpkin seeds.
