Almond Butter Pancakes
Ingredients
π 1 cup white whole wheat flour or whole wheat flour
π 2 teaspoons baking powder
π 1/4 teaspoon salt
π 1 1/4 cups unsweetened vanilla almond milk
π 1 large egg, slightly beaten
π 2 tablespoons pure maple syrup
π 1 1/2 teaspoons vanilla extract
π 1 tablespoon coconut oil, melted
π 1/3 cup almond butter
π Almond butter, berries, and maple syrup, for serving
Instructions
1. In a large bowl, whisk together flour, baking powder, and salt. Set aside.
In a medium bowl, whisk together milk, egg, maple syrup, vanilla and coconut oil. In a small, microwave safe bowl, melt the almond butter in the microwave for 20 seconds. Stir and add to the wet ingredients. Whisk until smooth.
2. Add wet ingredients to the flour mixture and stir just until combined. Do not over mix.
3. Heat a griddle or pan to medium low heat. Coat with cooking spray. Drop about a ΒΌ cup of batter onto heated skillet. Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a spatula, and cook until browned on the underside, 1 to 2 minutes more. Continue making pancakes until the batter is gone. Serve warm with almond butter, berries, and maple syrup, if desired.

βοΈ 4 large medjool dates soaked and pitted
βοΈ 1/3 - 1/2 cup filtered water
βοΈ 1/4 cup coconut oil melted
βοΈ 2-3 tbsp lemon juice
βοΈ 6 drops vanilla flavor extract
βοΈ dash himalayan salt
INSTRUCTIONS
Add all ingredients to a high-speed blender and blend until smooth. Add additional water in small amounts for blending or desired texture.

INGREDIENTS
βοΈ 1 cup fresh parsley
βοΈ 1/2 cup fresh mint leaves
βοΈ 1/4 teaspoon sea salt (I used 1/4 + 1/8 teaspoon)
βοΈ 4 medium yellow vine or Jersey tomatoes, chopped (I used 2-3 large red tomatoes)
βοΈ 1 cup shelled h**p seeds
βοΈ 2 tablespoons h**p oil (I used olive oil)
βοΈ 2 tablespoons freshly squeezed lemon juice
DIRECTIONS
1. In a food processor fitted with the βSβ blade, process the parsley, mint, and sea salt until minced.
2. Transfer the herbs and salt to a large mixing bowl. Add the tomatoes, h**p seeds, h**p oil, and lemon juice. Mix well, and serve.Stored in an airtight container in the fridge, the tabouli will keep for 2 days.

INGREDIENTS
βοΈ 1 1/2 cups of raw almonds
βοΈ 1 1/2 cups of h**p seeds
βοΈ 1/2 cup of natural peanut butter or almond butter
βοΈ 1/4 cup of melted coconut oil
βοΈ 1/4 cup of maple syrup
βοΈ 1 teaspoon of vanilla extract
βοΈ 1/2 teaspoon of sea salt
βοΈ 1/2 cup of cocoa nibs or mini chocolate chips
INSTRUCTIONS
1. Add the almonds to a blender or food processor and pulse until the almonds are broken down, but not a fine flour consistency.
2. Pour the almonds into a large mixing bowl, and mix in the rest of the ingredients until fully combined.
3. Line a 8x8 glass baking dish with parchment paper, and then pour the the mixture in.
4. Spread out until even, and then place a second piece of parchment paper on top and press down firmly.
5. Place in the freezer for at least 30 minutes.
6. Remove and cut into bars or squares.
