Chicken Alfredo Pasta Bake

✨Pasta Ingredients:
2 chicken breast
2 cups Barilla Protein Rotini, uncooked
4-5 cups broccoli, cooked (I used 2 microwavable bags)
1 cup Trader Joe’s Lite Mozzarella 

✨Alfredo Sauce Ingredients:
16 oz low-fat cottage cheese
1/2 cup almond milk 
1/4 cup parmesan
1/4 cup Trader Joe’s Lite Mozzarella
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/4 tsp. black pepper

✨Instructions:
STEP 1: Season both sizes of your chicken with black pepper, garlic powder, onion powder, paprika and Trader Joe’s 21 Seasoning Salute. Air fry for 23-25 minutes at 380˚F in your air fryer. 

STEP 2: Cook your pasta according to the package, but stop the cooking 2-3 minutes before al center. (ex: I cooked mine for about 7 minutes instead of 9-10.)

STEP 3: Combine all Alfredo sauce ingredients in a blender and blend until smooth.

STEP 4: Spray your meal prep container with avocado oil cooking spray, layer broccoli and pasta, and season with additional seasoning. (Make sure your broccoli is not overcooked, so it’s not mushy once baked.) 

STEP 5: Add in chicken and sauce, mix well and top each with an additional 1/4 cup of lite mozzarella cheese.

STEP 6: Bake for ~15 at 350˚F.

Note: I used 30 oz meal prep containers, so the portions are pretty large. You can easily make 5-6 meals (instead of 4) from this. 

Macros above are based on ingredients used being divided into 4 servings.
