My cheap & lazy meal tonight
Chicken Pot Pie Pasta!
1 can of cream of chicken
1 can of cream of mushroom
1 can cream of celery
2 cans of chicken
1 package of frozen veggies
1 package of egg noodles
Season however you like.😊
*Directions: cook noodles, dump all ingredients into 1 pan. The end.

Crock Pot Pork Enchilada
Put pork in the slow cooker on low for about 7 hours with a can of enchilada sauce (spiciness to your preference)
Pull out pork with a slotted spoon and shred with a cake mixer for fast shredding
Heat up tortillas and fill with meat and a little bit of juice (you can add rice, beans, onions, etc to your liking), roll burrito and place on oven safe dish, add more juice and shredded cheese, bake until melted, add more juice if desired.
Serve with Rice, beans, chips, salsa. Enjoy!
**You can also use beef, chicken or turkey meat

"My body is being a little stubborn but I continue to press forward. I told my fiance that the skinny girl is gone (smile). I am working on the appropriate size for me at 41 (wink). I am realizing that it is important for me to be comfortable in my skin and not worry about others and their progress. TEXAS SHEET CAKE
**WARNING: Not a diet recipe!
Bring to boil:
1 stick of butter
1 cup of water
4 TBS of Cocoa
Remove from heat and add to:
2 cups of flour
2 cups of sugar
1 tsp of salt
1 tsp of backing soda
Beat in :
2 eggs
1/2 cup of sour cream
Pour into large greased 15.5" x 10.5" pan.
Bake 20 mins 350 degrees
Let cool 10 mins and then ice cake.
Icing recipe:
Bring to boil:
4 TBS cocoa
6 TBS milk
1 stick butter
Remove from heat and add:
1 pound of confectioners sugar
1 tsp vanilla
1 cup of chopped walnuts (optional)
Pour over cake and spread. Enjoy!!

NOT low cal but delicious!!
Peach Dump Cake. (Made this yesterday and it was super good! We served it with ice cream, whipped cream and freshly grated cinnamon)
Ingredients.
1 (29 ounce) can sliced peaches in heavy syrup, undrained
1 (18.25 ounce) box yellow cake mix
1 Stick butter cut into pats
Directions
Preheat oven to 350 degrees.
Grease a 9 x 13-inch baking dish with spray
Pour peaches and heavy syrup into the prepared baking dish. Spread cake mix evenly over peaches. Arrange butter pats in even rows on the cake mix.
Bake in the preheated oven until top of cake is golden brown, 35 to 40 minutes.

I hate hate hate my picture taken! But guess what I was amazed when I put pictures together! I have come a long way from last summer!! right around 18 inches gone and somewhere around 15-20 lbs I've given up on scales they are inconsistent and can't tell you how good you feel! Southwest Spaghetti Squash
1 spaghetti squash ( 3 pounds)
1 (14 ounce) cans Mexican-style tomatoes, undrained
1 (14 ounce) cans black beans, drained and rinsed
3/4 cup low fat monterey jack cheese, divided
1/4 cup cilantro, finely chopped
1 teaspoon ground cumin
1/4 teaspoon garlic salt
1/4 teaspoon black pepper
Directions
Preheat oven to 350°F.
Cut squash in half lengthwise.
Remove and discard seeds.
Place squash, cut side down, in greased baking pan.
Bake 45 minutes to 1 hour or until just tender.
Using fork, remove spaghetti-like strands from hot squash and place strands in large bowl.
Add tomatoes with juice, beans, 1/2 cup cheese, cilantro, cumin, garlic salt and pepper; toss well.
Spray 1 1/2 quart casserole with nonstick cooking spray.
Spoon mixture into casserole.
Sprinkle with remaining 1/4 cup cheese.
Bake uncovered, 30 to 35 minutes or until heated through.
Makes 4 servings, approx 215 calories and 7g of fat
