🥣 Parsnip Soup – your new winter obsession!
Naturally sweet parsnips + warming cumin & coriander = pure comfort in a bowl 🌿✨ Vegan, easy & ready in under 40 mins!
Ingredients (serves 4):
• 350g parsnips, cut into 3cm pieces
• 1 medium onion, quartered
• 50ml olive oil
• 750ml vegetable stock
• 1 tsp Celtic salt (or to taste)
• Black pepper to taste
• ½ tsp ground coriander
• ½ tsp ground cumin
Method:
1. Heat olive oil in a pot. Add onion & parsnips → sauté 8-10 mins until soft & golden.
2. Stir in cumin & coriander → cook 1 min until fragrant 😍
3. Add stock, salt & pepper. Boil, then simmer 15-20 mins until tender.
4. Blend until super silky. Taste & adjust seasoning!
Top with: Caramelised onions, crispy croutons OR roasted fresh grown alfalfa sprouts for crunch 🧅🥖🌱

🌶️ Fermented Beetroot & Apple Salsa 🌿
A vibrant, tangy, and gut-friendly twist on traditional salsa! 💪✨

🥕 Ingredients
• 100 g fresh chillies (red or green), halved & deseeded
• 6–8 garlic cloves
• 8 sprigs fresh flat-leaf parsley (leaves only)
• 130 g Granny Smith apples, peeled & quartered
• 130 g raw beetroot, peeled & halved
• 350 g tomatoes, diced (1 cm cubes)
• 1 tsp coriander seeds
• ½ tsp cumin seeds
• 1 tsp dried oregano
• 110 g lime juice
• 1½ tbsp salt
• 70 g filtered water

👩🍳 Instructions
1. Chop chillies, garlic & parsley.
2. Add apples & beetroot — chop again.
3. Mix in remaining ingredients.
4. Transfer to a sterilised glass jar (≈1.5 L). Press down lightly & ensure salsa is just covered with water.
5. Leave 2 cm space at the top, seal tightly, and ferment 3 days at room temperature (away from sunlight).
6. Move to the fridge after 3 days.

SCOBY stands for Symbiotic Culture of Bacteria and Yeast.
It’s a living, jelly-like disk (often called a “kombucha mushroom” even though it’s not a fungus) that floats on top of the tea during fermentation. It looks a bit like a rubbery pancake — smooth, beige or tan, and slightly spongy.

⚙️ How SCOBY Works
SCOBY is essentially a tiny ecosystem that converts sweet tea into kombucha through fermentation:
1. 🍬 Yeast breaks down the sugar into alcohol and carbon dioxide.
2. 🦠 Bacteria then convert the alcohol into beneficial organic acids (like acetic, gluconic, and lactic acids).
3. This process produces the fizzy, tangy, probiotic-rich drink we know as kombucha.

• Yeasts: Saccharomyces, Brettanomyces, Zygosaccharomyces – they ferment sugar into ethanol and CO₂.
• Bacteria: Acetobacter, Gluconobacter – they convert ethanol into acetic acid and produce cellulose (which forms the SCOBY’s structure).
• Cellulose Mat: The jelly-like film that floats on top is actually cellulose produced by bacteria — it protects the culture and keeps the environment stable.
