Tomatoes are one of my favourite salad ingredients, and these are the last few picked from my garden this year. I finished those in a delicious tuna salad which had many other ingredients including spring onions, cucumber & fresh coriander.

The tomato & mozzarella salad is a true classic and summer favourite in our house. The simplicity of it is it's beauty, tomatoes, mozzarella, fresh basil, salt & pepper, rocket (my addition as I love the pepperyness) and organic extra Virgin olive oil & balsamic vinegar, so delicious πŸ˜‹πŸ…

Tomatoes are part of the nightshade family and are the major dietary source of the antioxidant lycopene. They are also a great source of vitamin C , potassium, folate & vitamin K.

Lycopene is found in higher concentration in the skin and the redder & riper the tomato the better.

It is also more bioavailable in processed tomato products such as passata, ketchup, tomato puree. However it's worth keeping in mind that shop bought will contain more sugar than a homemade version.

Heart healthπŸ…β€οΈ - lowering heart attack & stroke risk, reducing inflammation and oxidative stress through its antioxidant properties.

Cancer prevention 🫁
Observational studies have noted the link between tomatoes and fewer incidences of prostate, lung & stomach cancers.

Eye health πŸ‘οΈ
Lycopene is not the only eye protective nutrient: they also contain lutein and beta-carotene. According to research these nutrients can support vision and protect against cataracts and macular degeneration.

There are many ways to add tomatoes into your diet, whether it be raw in salads, roast with thyme & garlic, made into your favourite pasta sauce or chilli or a classic tomato soup. These are a health boosting addition to any dietπŸ…β€οΈπŸŒΆοΈπŸ˜‹

One day, two different work spaces, home and the clinic I work at, Natural Balance. After two weeks off, I feel rested and recharged and I return to work with a sense of joy, gratitude and anticipation. I'm so lucky to have a career that fills me up this way.

I'm fully booked for the next two weeks at home, and can't wait to see all my regular clientsπŸ™β€οΈ.

Inspired by my friend Liz Greader, I've made a squash, carrot & red Lentil soup. It also has a healthy dose of celery, fresh garlic, ginger, turmeric & black pepper. This is a powerhouse of nutrition, perfect for this time of year when coughs, colds and viruses are on the rise. High in Vitamins A, C & K.

It's anti inflammatory, aids digestion, boosts the immune system, good for heart health, helps control blood sugar to name but a few of the many health benefits.

I topped it with fresh coriander, coconut milk, toasted fennel and sesame seeds and a drizzle of h**p seed oil for essential fatty acids. πŸ₯•πŸ₯•πŸŽƒ πŸŽƒ
