Houmous of choice for spreading on pitta
Wholemeal pitta bread (lightly toasted to open it up)
Turkey slices
Sliced beetroot
Red pepper slices
Sliced cucumber
Chopped watercress, rocket and spinach

✨ Looking for a quick, high protein, low-carb meal packed with vitamins and nutrients? Look no further!

🍳🥦 I’ve swapped out the usual scrambled eggs on toast for a delicious twist, scrambled eggs with veggies! 🍅

It’s a simple, nutritious and perfect for a healthy boost plus it’s so easy to customise with whatever veggies you’ve got to hand.

See below for my recipe:

2 x eggs ( I used large)
1 x Heaped Tbsp of cottage cheese (low fat or normal)
1 x Tbsp nutritional yeast
Selection of thinly slice veggies of choice (see mine below)

Whisk the eggs and put into a non stick pan on a low heat. When it starts to scramble add the cottage cheese.

To make the veggies put a drop of olive oil in a flat based frying pan and fry on a medium to high heat.

You can use any variety of vegetables just make sure they’re cut to a similar size so that they cook and are ready to eat the same time.

🥗 I’ve used some kale, chopped tomatoes, yellow pepper and some celery but you can use anything that you’ve got left over.

Adding tomatoes adds a lovely flavour when pan fried with the rest of the vegetables.

Add the tablespoon of nutritional yeast to the vegetables and mix in. This adds in a mild cheese flavour. Plus you get your vitamin B12 in the one tbsp!

Dish out and enjoy! 😋

This will give you approximately 20 g of protein.
