3 years ago - I keep forgetting how special it is to work on horses in a field without anything to make them stay and have a treatment. Obviously, It doesn't happen with every horse - 🐴 are as unique as people; just more intuitive.

Our cucumbers are ready, the sun is gloriously shining bright and hot! Greek cuisine it shall be: Tzatziki with Naan bread. Quick and easy to prepare and coolingly light for a wonderful bite. Enjoy! Happy Sunday everyone, Maggie

Hot summer days call for the perfect starter to enhance that holiday feeling! This is one of our family favourites, enjoy!

Tzatziki
Mix one small pot of natural (preferably Greek style) yogurt, 200 gr grated cucumber, 1 crushed garlic glove and season it to your liking with salt, lemon juice and dill or even mint and parsley.

Mini naan breads (low-carb version)
300 gr spelt flour, 150 gr self-raising flour, 1 tsp salt, 2 tsp sugar, ½ tsp baking powder, 1 egg, 250 ml full milk, 2 tbsp sunflower oil
Mix all dry ingredients together, whisk the egg with the milk and gradually add it to the flour. Mix until a dough is formed, add the oil and knead it well for about 5 minutes. Wrap the dough in clingfilm (or leave it in a bowl covered with a damp teatowel) and leave it to rest for at least 1 hour, maximum up to 8 hours.
Then, dust the work top and your hands with flour, take walnut size portions of the dough and roll them out to hand-sized flat breads. Heat up a non-stick frying pan and fry the breads on both sides until slightly puffed and browned. Brush with melted butter if you like. The breads keep for a couple of days if wrapped in a tea towel. We like to reheat them in the microwave and using them as a Pizza base.
