🧁 INGREDIENTS

🧁 1 scoop Formula 1 Shake Mix, Café Latte
🧁 ¾ cup cake flour
🧁 ¾ cup whole-wheat pastry flour
🧁 ½ cup unsweetened cocoa powder
🧁 ½ tsp baking soda
🧁 ½ tsp salt
🧁 ¼ tsp baking powder
🧁 1 cup brown sugar
🧁 ½ cup light butter or coconut oil, softened
🧁 2 large eggs
🧁 1 tsp vanilla extract
🧁 ¾ cup almond milk

🍫 FROSTING

🍫 170g bittersweet or semisweet chocolate, finely chopped
🍫 β…“ cup cream
🍫 ½ tsp vanilla extract
🍫 2 tbsp mini chocolate chips (optional)

🧁 METHOD

1️⃣ Preheat oven to 177Β°C and line 12 muffin cups with paper cases

2️⃣ Whisk together the Formula 1, flours, cocoa powder, baking soda, salt and baking powder

3️⃣ In a separate bowl, beat together the sugar and butter (or coconut oil) until combined. Add eggs one at a time, then mix in the vanilla

4️⃣ Alternate adding the dry ingredients and almond milk until just combined

5️⃣ Divide between the muffin cases (around ΒΎ full)

6️⃣ Bake for 18–22 minutes or until a skewer comes out clean

7️⃣ Leave to cool for 5 minutes before transferring to a wire rack

🍫 TO MAKE THE FROSTING

1️⃣ Place chocolate in a heatproof bowl

2️⃣ Heat cream and vanilla until simmering (don't boil)

3️⃣ Pour over the chocolate and leave for 3 minutes

4️⃣ Whisk until smooth, then beat until light and fluffy

5️⃣ Spread over the cooled cupcakes and decorate with mini chocolate chips if desired

✨ Makes 6–8 cupcakes

A really brilliant review for Claerwen this week πŸ‘

Running a busy business and still making time to focus on her health β€” and it’s clearly paying off πŸ’ͺ

At her 40-visit mark, the progress is coming together nicely:
