These homemade seed crackers are so easy to make and go well with hummus, cheese, eggs, guacamole or anything really! They are also low carb so perfect if you are diabetic.

Ingredients:
70g Pumpkin seeds
70g Sesame seeds
25g Chia seeds
100g Sunflower seeds
1tbsp Ground flax seed
Salt & pepper
180ml Hot water

Mix all dry ingredients together then add water and stir, let sit for a few minutes so the water can be absorbed slightly.

Add to a lined baking tray and smooth out as thinly as possible.

Score into squares and bake for 1 hour at 150 fan.

Try adding dried rosemary for a different flavour!

Can be stored for a week.

If you’re taking Metformin, you need to be aware of the common side effect which is Vitamin B12 deficiency.

Metformin reduces our body’s ability to absorb B12.

Some serious complications of B12 deficiency are:
👁️ Vision problems
🧠 Memory problems
🦵 Irreversible nerve damage (peripheral neuropathy)

Although we can store B12, we need to consume it via animal products 🥚 🥩 🧀 or supplementation💊 to avoid depletion.

Long-term Metformin use can use up our storage and as absorption is reduced, can lead to deficiency.

This can be easily prevented through adequate supplementation, however, you need to be aware of the side effect in order to prevent it’s effects.

If you’re constantly feeling anxious or craving sugary snacks, try keeping a food diary for a few days and pay attention to foods you’re eating that might be spiking your blood sugars. Toast and jam for breakfast, smoothy with lots of fruit like banana and added honey, sugar in tea or coffee, pasta heavy meals, yogurt pot with sugary compote and granola. Some foods are labelled as healthy but could be causing you to be on a constant glucose rollercoaster 🎢

The good news is you can change this quite easily. Aim to have fibre and protein with every meal. If you want a sweet treat, have it as a dessert and opt for healthy options like berries and Greek yoghurt, dark chocolate (70% cocoa or higher), medjool dates with peanut or other nut butter (100% nuts).
