🍋💚 BAKE OFF NIGHT… SO LET’S BAKE! 💚🍋

It’s Bake Off night! 👩‍🍳🎂

And I know what happens when Bake Off is on… suddenly we’re all craving cakes, biscuits, pastries and basically anything that comes out of an oven 😂

So tonight I thought I’d share one of my personal favourites from the Slimming World app…

✨ PISTACHIO, FIG & LEMON BISCOTTI ✨

Crunchy, fruity, lemony and absolutely gorgeous with a cup of tea ☕️

And the best bit?

💚 2½ swips each
🍪 Makes 24
⏰ About 1 hour
✨ Twice-baked for that lovely crunchy biscotti texture

🛒 YOU’LL NEED

50g shelled pistachio nuts
200g plain flour, plus 1 tsp for dusting
½ tsp baking powder
2 level tbsp sweetener granules
50g dried figs, chopped small
2 medium eggs + 1 yolk
Zest of 1 large unwaxed lemon
½ tsp vanilla extract
A pinch of salt

👩‍🍳 METHOD

1. Preheat your oven to 180°C/fan 160°C/gas 4 and line a baking tray with non-stick baking paper.

2. Spread the pistachios over the tray and roast for 5 minutes. Remove and leave to cool.

3. Sift the flour, baking powder and a pinch of salt into a bowl. Stir in the sweetener, chopped figs and pistachios.

4. In another bowl, lightly beat the eggs and egg yolk with the lemon zest and vanilla extract. Make a well in the dry ingredients and stir in the egg mixture to make a soft dough. Knead briefly on a lightly floured surface until smooth.

5. Divide the dough in half and roll each piece into an 18cm-long sausage. Place them on the prepared tray, about 10cm apart, and flatten slightly. Bake for 25 minutes, until lightly golden and a skewer inserted into the centre comes out clean. Leave to cool for 10 minutes.

6. Reduce the oven to 150°C/fan 130°C/gas 2.

7. Using a serrated knife, cut each log diagonally into 12 slices, about 1cm thick. Place them cut-side down on the tray and bake for another 20 minutes, turning halfway through. They should feel slightly firm and dry. Transfer to a rack and leave to cool completely.

They’ll get harder and crunchier as they cool. Store in an airtight tin. 💚

🍛 CRISPY CHICKEN KATSU CURRY

Serves 3–4 | Fakeaway favourite ❤️

Crispy golden chicken, silky smooth curry gravy, fluffy rice and loads of Speed Food. This is proof that Food Optimising doesn’t have to mean boring!

🛒 YOU WILL NEED

For the Katsu gravy

* 6 chicken thigh fillets or chicken breasts
* 2 tsp curry powder, use 1 tsp for a milder curry
* 4 cloves garlic
* 3–4 carrots
* 2 onions
* 2 small potatoes
* 350ml chicken stock
* 2 tbsp soy sauce

For the crispy chicken

* 75g panko breadcrumbs
* 1 egg, beaten, for egg wash
* 1 kcal cooking spray

To serve

* Basmati or jasmine rice
* Plenty of Speed Food or salad
* Nigella seeds
* Spring onions



🍚 PERFECT FLUFFY RICE

1. Rinse 1 cup of basmati rice until the water runs clear.
2. Soak in cool water for at least 15 minutes.
3. Drain and add to a pan with 2 cups cold water and a little salt.
4. Bring to the boil.
5. Once you see the bubbles, turn the heat right down and cover with a lid.
6. Simmer on low for 10 minutes.
7. Turn the heat off and DO NOT REMOVE THE LID!
8. Leave covered for another 5 minutes.

✨ Alex’s tip: Leaving the lid on allows the rice to finish steaming and gives you lovely fluffy rice rather than sticky rice.



🍛 THE KATSU GRAVY

1. Roughly chop your carrots, onions, garlic and potatoes.
2. Heat a large pan and add the vegetables.
3. Cook using 1 kcal spray, water or a splash of chicken stock.
4. Sprinkle over the curry powder and add the soy sauce.
5. Pour in the 350ml chicken stock.
6. Cover with a lid and cook until the vegetables are really, really soft.
7. Blitz until completely smooth.

✨ SECRET TIP: Want your gravy extra silky? Add 4–5 ice cubes while blitzing. It helps create that lovely smooth, glossy Katsu-style sauce.



🍗 CRISPY CHICKEN

1. Preheat your oven to 180°C fan.
2. Beat an egg in a bowl.
3. Dip each piece of chicken into the egg wash.
4. Coat thoroughly in the panko breadcrumbs.
5. Place onto a lined baking tray.
6. Spray generously with 1 kcal cooking spray.
7. Bake for approximately 35 minutes, depending on the thickness of your chicken.
8. Spray again halfway through cooking for an extra golden, crispy coating.
9. Make sure the chicken is cooked through before serving.

✨ Alex’s tip: Don’t squash the breadcrumbs onto the chicken too much. Keep that coating nice and fluffy so it goes beautifully crispy in the oven!



🥗 TIME TO BUILD YOUR BOWL

And this is where we make it look as good as it tastes! 😍

1️⃣ Start with Speed Food
Fill at least ⅓ of your plate/bowl with your favourite salad or Speed vegetables.

2️⃣ Add your rice
Fluffy basmati or jasmine rice.

3️⃣ Pour over that gorgeous Katsu gravy

4️⃣ Slice your crispy chicken
Pile it generously on top.

5️⃣ Finish with the good stuff
Sprinkle over nigella seeds and sliced spring onions.
