Classic Sapin sapin
How to cook Sapin sapin
Ingredients:
โ
400ml coconut cream
โ
2 cups glutinous rice flour
โ
1/2 cup white sugar
โ
pinch of salt
โ
400 ml coconut milk
โ
1 cup condensed milk
โ
1 tbsp vanilla essence
โ
1 tsp violet liquid food color
โ
1/ 2 tsp yellow liquid food color
Procedures:
1. For the latik, pour 400 ml coconut cream in a pan and bring to a simmer.
2. Continue to cook while stirring until the oil and curd separate.
3. Remove from the pan once it becomes brown or light brown and drain. Set aside.
4. In a large bowl, combine 2 cups of glutinous rice flour, 1/2 cup white sugar, pinch of salt. Mix well.
5. Slowly add 400 ml coconut milk while stirring.
6. Add 1 cup of condensed milk.
7. Keep stirring until the consistency becomes smooth.
8. Divide the mixture into 3 equal parts.
9. Add 1 tbsp vanilla essence to one bowl of batter. Mix well.
10. Add 1/2 tsp of violet food color to the second bowl of batter. Mix well.
11. Lastly, add 1/2 tsp yellow food color to the last bowl of batter. Mix well.
12. Grease the molder (you prefer) with coconut oil extracted from the latik.
13. Pour the violet color mixture.
14. Then place in the steamer plate or rack and steam for 12 minutes over medium heat (pre-heat steamer).
15. Pour the white color mixture.
Then steam again for 12 minutes.
16. After 12 minutes, pour the yellow color mixture and steam again for 12 minutes.
17. Remove the pan from heat and let it cool down completely.
18. Transfer in a large serving plate or any.
19. Add latik on top and slice into serving pieces.
20. Enjoy!
