This Raspberry Dark Chocolate Chia Oatmeal Cake is packed with fiber, omega-3s, and rich chocolate flavor! π«π

Instructions
1οΈβ£ Preheat & Prep: Preheat oven to 350Β°F (175Β°C) and grease or line an 8x8-inch (20x20cm) baking pan.
2οΈβ£ Mix Dry Ingredients: In a bowl, whisk together oats, almond flour, baking powder, baking soda, salt, and chia seeds. πΎβ¨
3οΈβ£ Mix Wet Ingredients: In another bowl, whisk together maple syrup, eggs, almond milk, melted coconut oil, and vanilla extract. π―π₯π₯

2 large eggs
1 cup rolled oats

Chocolate Oat Bars π«πΎ
Ingredients
2 cups (180 g) rolled oats
1/2 cup (120 g) honey or agave syrup
1/4 cup (60 g) almond or peanut butter
1/2 cup (80 g) chopped dark chocolate
1/4 cup (30 g) chia seeds (optional)
1/4 teaspoon vanilla extract
1 pinch salt
Instructions
βΆ Prepare the mixture:
In a large bowl, mix the oats, chia seeds (if using), and salt.
β· Melt the liquid ingredients:
In a small pan over low heat, melt the honey and almond (or peanut) butter until smooth. Stir in vanilla extract.
βΈ Combine ingredients:
Pour the warm mixture over the dry ingredients and mix well.
βΉ Add the chocolate:
Stir in the chopped dark chocolate until evenly distributed.

π Coconut Lime Chicken with Rice π₯₯π
This creamy, zesty Coconut Lime Chicken with Rice is a tropical delight, perfect for adding a burst of flavor to your weeknight dinners!
Ingredients π
4 chicken breasts or thighs π
1 can coconut milk (13.5 oz) π₯₯
2 tbsp lime juice π
1 tbsp lime zest π
2 cloves garlic, minced π§
1 tbsp soy sauce πΆ
1 tbsp olive oil πΏ
1 tsp ginger, minced (optional) π±
Salt & pepper, to taste π§
1 cup jasmine or basmati rice π
Fresh cilantro for garnish πΏ
Lime wedges for serving π
Instructions π
1. Marinate the Chicken
In a bowl, combine coconut milk, lime juice, lime zest, minced garlic, soy sauce, ginger (if using), salt, and pepper.
Add the chicken to the mixture and let it marinate for at least 30 minutes (or overnight for extra flavor). π₯₯π
2. Cook the Chicken
Heat olive oil in a skillet over medium heat.
