Mutton Salad with Green Smoothie •
•
1 tbsp avacado oil
leftover cooked roast lamb - shredded into bite size chunks
2 tbsp cornflour (cornstarch) mixed with a pinch of salt and pepper
140 g baby salad leaves
150 g pot of sun blush tomatoes in olive oil - drained - you can mix the drained oil with the balsamic for your salad dressing if you like
1/2 large red onion peeled and sliced thinly
100 g feta cheese - crumbled
For the dressing:
2 tbsp good quality balsamic vinegar
1 1/2 tbsp olive oil
pinch of salt and pepper INSTRUCTIONS
Heat the vegetable oil in a large pan or wok (a high sided pan is best to reduce oil spattering). Coat the lamb in the cornflour, and when the oil is hot, add to the pan (you can check it's hot enough by putting one piece of lamb in the pan. If it sizzles, it's hot enough). Cook on a high heat for about 5 or 6 minutes, turning every couple of minutes until the lamb is crispy and brown.
Whilst the lamb is cooking, make the dressing by mixing all of the dressing ingredients together.
Arrange the salad leaves on four plates or one large serving platter.
When the lamb is ready, remove from the pan with a slotted spoon and place on some kitchen roll to soak up any excess oil.
Top the salad leaves with the crispy lamb, then add the sun blush tomatoes. Sprinkle on the red onion slices and feta cheese before serving with the balsamic dressing. Calories: 541kcal

Aam Panna 😋 🥭 INGREDIENTS
FOR PRESSURE COOKING:
1 raw mango
2 cup water
OTHER INGREDIENTS:
3 tbsp mint / pudina
¼ cup organic jaggery .india
½ tsp cardamom powder
½ tsp cumin pwoder
½ tsp pepper powder
¾ tsp pink salt 1 pinch asafoetida(heeng) FOR SERVING:
few ice cubes
cold water INSTRUCTIONS
firstly, in a pressure cooker take 1 raw mango and pour 2 cup water.
cover and pressure cook for 5 whistles or until mango are cooked well.
cool completely, and peel the skin of mango.
also, scrape the pulp of mango making sure the skin has separated.
transfer the mango pulp to a blender.
also add 3 tbsp mint, ¼ cup jaggery powder
blend to smooth paste without adding any water.
now add ½ tsp cardamom powder, ½ tsp cumin powder, ½ tsp pepper powder , 1 pinch heeng and ¾ tsp pink salt
mix well making sure everything is well combined. aam panna concentrate is ready.
to serve, in a tall glass take a tbsp of aam panna concentrate and add few ice cubes.
pour in ice-cold water and mix well.
finally, enjoy aam panna garnished with fresh mint leaves. Prawn Salad 🥗🥗🥗 INGREDIENTS
2 pounds medium cooked shrimp
1/3 cup freshly squeezed lemon juice
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 teaspoons Dijon mustard
3/4 cup extra virgin olive oil
1 pound cooked green beans, cut into 1-inch pieces
1 pound cooked Carrot , cut into 1-inch pieces 1bunch celery, sliced 1/4-inch thick
1 bunch green onions, thinly sliced
1 medium green or red bell pepper, cut into 1/4-inch slices
1 medium cucumber, peeled, quartered, and sliced
1/2 pint pear tomatoes, halved
1 cup pitted black olives, halved
1 bunch chives, thinly sliced
1/2 cup fresh basil leaves, torn into small pieces. INSTRUCTIONS
Place shrimp in a shallow bowl and set aside.
Combine lemon juice, salt, pepper and mustard in a medium-mixing bowl and whisk to mix. Whisk in oil in a slow stream so that the dressing does not separate.
Immediately pour half of the dressing on the shrimp. Fold the shrimp and dressing together with a rubber spatula to make sure they are evenly coated. Cover and refrigerate.
Combine all remaining ingredients in a large mixing bowl and fold in the remaining dressing with a large rubber spatula. Cover and refrigerate.
About half an hour before serving, add the shrimp to the vegetable salad and fold together with a rubber spatula. Taste for seasoning and add more salt, pepper or lemon juice as needed. Serve immediately. NUTRITION

💜Jamun Ice Tea🧊 Ingredients-
•5 peppermint tea bags
•150gms Jamun
2 tbsp brown organic sugar
•large handful ice
•handful mint leaves
•few lemon slices Method- In a medium pot, combine the Jamun with 1 cup water. Bring the mixture to a boil, then lower to a simmer. Cook the Jamun for 5 minutes, using a large spoon to mash up.Stir in the lemon juice, mint, and sugar. Allow the mixture to simmer for another 1 to 2 minutes so the mint flavor infuses. Remove from the heat and strain the Jamun mixture through a fine-mesh strainer, discarding the solids. Set the Jamun syrup aside.
In another small pot, bring 6 cups of water to a boil, then turn off the heat. Steep the peppermint green tea bags in the water for 5 to 10 minutes, then discard the tea bags.
Stir the Jamun syrup and the peppermint green tea together in a pitcher. Adjust the sweetness with more sugar if you’d like. Chill for at least 2 hours.
Serve in individual glasses with plenty of ice. Garnish with mint sprigs. 💜Jamun is a very good fruit for controlling blood sugar levels especially in diabetics.

Iced Hibiscus and Mint Tea The tastes of hibiscus and mint are a partnership made in heaven, and this Mint and Hibiscus Tea is delicious either hot or cold. Dried hibiscus flowers are known in the Caribbean as ‘sorrel’, and this glorious, naturally ruby red drink is a Christmas tradition there. Hibiscus’ wonderful tart taste pleasantly neutralizes any bad taste from chemo drugs, plus it is rich in vitamin C, beta-carotene and antioxidant flavonoids, while mint aids digestion Ingredients:
2 teaspoons dried roselle flowers (hibiscus)
3 sprigs of mint or 1 mint teabag
2 teaspoon cane sugar 3 Ice Cubes Preparation:
Put the dried hibiscus flowers into a large teapot and cover with boiling water. Add the mint. Cover and leave to steep for 5-10 minutes.
If you are drinking the tea hot, pour it into a cup through a strainer, add a couple more mint leaves, stir in sugar or honey to taste. For iced tea, pour into a quart jug or carafe through a strainer. Stir in the sugar if using until it is dissolved. Add more cool water if needed, cover with plastic wrap and leave to cool in the fridge. Serve over ice garnished with mint leaves.

Todays Brunch- Zucchini eggsalad. Ingredients
•1 pound (1/2 kg) zucchini •1/2 Capsicum •1 🧅 onion •1/2 boiled 🥕 •100gms boiled french beans •1/2 tsp black salt
•1 large egg hard boiled
•2 tsp avacado oil •1/2 tsp crushed garlic 🧄 •1/2Tbsp cumin
•pinch of paprika or cayenne pepper
•small handful of parsley (optional) Instructions—
INSTRUCTIONS
•Wash and chop your boiled carrot, beans, capsicum and zucchini. Place in a large serving bowl.
•Slice your shallot (or red onion) and soak in 2 tbsp lemon juice. Set aside.
•In a large saute pan over medium-high heat, add the olive oil and heat. Add the garlic and saute, stirring, for 1 minute. Add the all of the vegetables and cook until just starting to wilt, about 2 minutes. Add the oregano, soy sauce and chicken stock and stir well and cook just until vegetables are wilted, about 3 minutes. Remove from heat and serve.

Ingredients-
Water
Fresh Turmeric
Fresh Ginger
Mint
Orange
Black Pepper. Preparation- First you start with boiling water for the tea. Then, wash turmeric, ginger, mint and orange. Peel the turmeric and ginger. Just bear in mind that turmeric is also used as coloring so it will stain your fingers. The easiest option is to use gloves when peeling it. However, if you don’t mind having orange looking fingers for a day or two, then don’t worry about the gloves. I thinly slice both the ginger and turmeric and place them in a mug or heat-proof jug. Add fresh mint leaves, a pinch of black pepper (per cup) and 1-2 orange slices. Pour over boiling water and let it steep for 10-15 minutes before drinking. By the way, you can strain the tea before drinking. If you don’t, just bear in mind that the longer the tea sits the stronger it gets.
