An important announcement on "Do It Yourself" homemade tests for our Rare Raw Monofloral & Multifloral Honey varieties.

Raw, unpasteurized and non-homogenized honey varieties will most likely fail some if not all of the “Do It Yourself” homemade purity tests passed off as scientifically factual via YouTube, WhatsApp and other social media platforms.

These rudimentary tests have been created over the years to primarily test commercial grade honey which is pasteurized and homogenized. This is done in order to remove moisture and increase the shelf-life of the product. These processes also stabilize the glucose to fructose ratio to create a denser end product which is less absorbable, less miscible, less likely to fully crystallize and more likely to be inflammable. As a result, commercial grade honey is more likely to pass these DIY homemade purity tests.

What is not often discussed though is that both the aforementioned processes aid in the formation of undesirable compounds derived from pentoses [furfural] and hexoses [5-hydroxymethylfurfural (5-HMF)]. These processes also expedite the removal of essential microelements and phenolic compounds (flavonoids and non-flavonoids) from the honey.

Raw honey on the other hand, which is overtly prone to crystallization; retains all of the micro-elements & phenolic compounds. These rare and natural compounds impart unique tastes and fragrances to each of our raw honey varieties. With an innately unstable glucose to fructose ratio, unheated and non-homogenized nature of the honey; we expect our entire range of raw honey varieties to actually fail these DIY tests as they are simply not broad enough to test this genre of honey. Testing raw honey warrants the use of a set of completely different parameters and equipment which only accredited food laboratories possess.

In the case of wild honey varieties, honey is ethically sourced from tribal communities engaged in beehive tracking. On the other hand, boutique honey varieties are sourced from small-scale non-migratory season specific apiaries stewarded by master apiarists. We source our honey exclusively from rich & pristine biodiversity hot-spots.
