No-Flour, No-Sugar Carrot Cake

Ingredients

2 cups (200 g) finely grated carrots
2 cups (200 g) rolled oats
2 large eggs
2 ripe bananas
1/4 cup (60 ml) milk (dairy or plant-based)
1/4 cup (60 ml) melted coconut oil or light olive oil
1 tsp vanilla extract
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
1/2 cup (60 g) chopped walnuts or pecans (optional)
1/4 cup (40 g) raisins (optional)

Instructions

Preheat oven to 350°F (175°C). Grease or line an 8-inch (20 cm) round cake pan.
Blend the oats into a fine flour.
Add bananas, eggs, milk, oil, and vanilla to the blender and blend until smooth.
Pour into a bowl and stir in grated carrots, baking powder, cinnamon, nutmeg, salt, and optional walnuts and raisins.
Transfer the batter to the prepared pan and smooth the top.
Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
Cool for 10–15 minutes before removing from the pan. Cool completely before slicing.

Optional Healthy Topping
Mix 1 cup plain Greek yogurt, 1 tsp vanilla, and 1–2 tbsp almond butter. Spread over the cooled cake and sprinkle with chopped walnuts

Crackers

ingredients:
- ½ cup chia seeds | 60g
- ½ cup flax seeds | 60g
- 1 cup water | 240ml
- 2 tablespoons olive oil | 30ml
- ½ teaspoon garlic powder | 1g
- ½ teaspoon dried oregano | 1g
- ¼ teaspoon salt | 1g
- Pinch of red pepper flakes (optional) | 0.5g

directions:
1. Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
2. In a large bowl, combine the chia seeds and flax seeds.
3. Add the water and stir well. Let the mixture sit for 10-15 minutes, allowing the seeds to absorb the water and form a gel-like consistency.
4. Stir in the olive oil, garlic powder, oregano, salt, and red pepper flakes (if using). Mix everything together thoroughly.
5. Spread the mixture thinly and evenly onto the prepared baking sheet using a spatula or the back of a spoon. The thinner you spread it, the crispier the crackers will be.
6. Bake for 30-40 minutes, or until the crackers are golden brown and crisp. Keep an eye on them, as baking times may vary.
7. Once done, let the crackers cool completely on the baking sheet before breaking them
