No tomato paste no problem I got you covered cousins and you can preserve it without refrigerating for up to 12months Ingredients • Ripe tomatoes • Beetroots (peeled & chopped) • Carrots (peeled & chopped) • Garlic (peeled) • Bay leaves • 2 tbsp olive oil (optional, for richness & longer shelf life) ⸻ 🫙 Preservation (Canning Method) Sterilize Jars • Wash jars and lids with hot soapy water. • Sterilize jars by boiling for 10 minutes or heating in oven at 120°C (250°F) for 15 minutes. • Keep lids in hot (not boiling) water. Fill Jars • While paste is still hot, spoon into sterilized jars. • Leave ½ inch (1 cm) headspace. • Add 1 tsp lemon juice or ¼ tsp citric acid per 250 ml jar. • Wipe rims, cover, and tighten fingertip-tight. Water Bath Processing • Place jars in a deep pot lined with cloth. • Cover with boiling water (1 inch above). • Boil 40 minutes (250–500 ml jars). • Remove and let cool undisturbed 12–24 hrs. Check Seals • Lids should “pop” down and stay firm. • If any don’t seal → cover the top with oil refrigerate and use within 3 week. ⸻ Storage • Keep sealed jars in a cool, dark pantry. • Shelf life: 12–18 months. • Once opened: refrigerate & use within 7 days.
