Coconut Rice(MSG-Free) Recipe.
Ingredients
2 Cups of rice
1 Big Coconut
1 serving spoon Olive oil
Meat Stock
Liver
Meat
Ground Crayfish
Sea Salt
SPICES :
Cellimpact Mixed Spice (half teaspoon)
Dried Chilli(quarter teaspoon)
Dried Cameroun Pepper(quarter teaspoon)
Onions.
VEGETABLES
Carrots
Spring Onions
Green Pepper
Green Peas
Method:
PREPPING
1)Wash and cut up all vegetables
2)Break and Grate coconut
3)Blend coconut with little water and squeeze out the coconut water.
4)Cut, Rinse, strain and season (with salt, Cellimpact Mixed Spice, ginger, garlic, onions and salt). Boil with little water. Strain and keep meat stock.
5)Cut up, season(with Cellimpact Mixed Spice and Salt) and roast the other half of the meat.
6) Measure Rice, Rinse and Parboil
7)Strain the Parboiled rice.
COOKING
1)Measure one serving spoon Olive Oil into a dry pot.
2)Put in your vegetables and stir-fry lightly. Remove vegetables from the pot with a spoon strainer.
3)Pour in Coconut water and Stir
4)Pour in meat stock, stir
5)Add Cellimpact Mixed Spice, Crayfish, salt and more spices to taste.
6) Add Parboiled rice and cover
7)Cook on low heat
8)Check if rice is soft and Whole. Add more water if needed.
9)Add stir fried vegetables and more spices if desired.
10)Stir till done.
11) Serve with Roasted meat and Roasted plantain.
12)Enjoy

So last week Saturday, we went out to cook with some amazing mothers.
We had a cooking session where we made delicious coconut rice without a single boulion cube. We used Natural&Sazzy MSG-Free seasoning all through.
Food was so delicious we almost forgot to take pictures.
