Fruit oils are better oil for shallow frying (example extra virgin olive oil, avocado oil, coconut oil). They are better than seed oil are they experience less processing and chemical additives.
Coconut oil and Extra virgin olive oil are cold pressed meaning way less processing. You are getting the exact real deal. (When buy fruit oils, the cold pressed ones are the best).
One of the major problems with fries, especially roadside fries, is the oil.
These people will use one set of oil to fry puff puff, yam, potatoes, Akara, etc, from morning till evening. The same oil. Sometimes, the oil gets so bleached it is almost turning black, they won’t still pour it away, they will turn the extraordinarily bleached oil into “sauce” for their fries. Chai 🤔

When you fry with beef tallow.
The oil is very heat stable, doesn't go Rancid.
It has very high boiling point than most of your seed oils, it fries very fast and doesn't soak oil uneccessarily.
It's very healthy.
It's cheaper, just go to slaughter.
