Smoky Party Jollof Rice (The King of Nigerian Food)

Ingredients:
Rice, tomatoes, pepper, onions, vegetable oil, tomato paste, seasoning cubes, salt, thyme, curry, chicken stock

Recipe:

Blend tomatoes, pepper & onions
Fry tomato paste in oil till dark
Add blended mix + spices
Pour in stock and boil
Add washed rice and cook on low heat
Let it burn slightly for that smoky flavor 🔥

Delicious Porridge Yam Recipe
Porridge yam, also known as "Asaro" in Nigeria, is a comforting and flavorful dish that's perfect for any meal. Here's how you can prepare a delicious porridge yam:
Ingredients:
1 medium-sized yam tuber (about 2-3 pounds)
1/4 cup palm oil (you can use vegetable oil as a substitute)
1 medium onion, chopped
2 cloves garlic, minced
1-2 scotch bonnet peppers or habanero peppers, chopped (adjust to taste)
2 cups chopped tomatoes (or 1 can of chopped tomatoes)
1 cup chicken or vegetable broth
1 teaspoon ground crayfish (optional)
1 teaspoon smoked paprika
Salt to taste
1-2 tablespoons ground crayfish (optional)
Fresh spinach or bitter leaves (optional, for added nutrition)
Protein options: Dried fish, smoked fish, or cooked chicken (optional)
Instructions:
1.Prepare the Yam:
oPeel the yam and cut it into medium-sized cubes. Rinse the yam cubes thoroughly and set them aside.
2.Cooking the Base:
oHeat the palm oil in a large pot over medium heat. Add the chopped onions and sauté until they are soft and translucent.
oAdd the minced garlic and chopped scotch bonnet peppers. Sauté for another 2-3 minutes, stirring continuously.
3.Add Tomatoes and Seasoning:
oStir in the chopped tomatoes and cook until the tomato mixture reduces and the oil starts to separate from the tomatoes.
4.Incorporate the Yam and Broth:
oAdd the yam cubes to the pot and stir to coat them with the tomato mixture.
oPour in the chicken or vegetable broth, ensuring that the yam cubes are mostly submerged. If necessary, add a little more water to cover the yams.
5.Cooking the Porridge:
oBring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 20-30 minutes, or until the yam becomes tender and starts to break down.
6.Add Crayfish and Adjust Seasoning:
oAdd the ground crayfish if using, and season with salt to taste. Stir gently to avoid breaking the yam pieces too much.
oIf you're adding any protein like dried or smoked fish, add them at this stage and let them cook through.
7.Final Touches:

Here's how to prepare Goat Meat Pepper Soup in a traditional Nigerian way:

INGREDIENTS
1 kg goat meat (cut into bite-sized pieces)
2 tablespoons ground pepper soup spice mix (a blend of spices such as calabash nutmeg, uziza seeds, and others)
2-3 fresh Scotch bonnet peppers (or to taste), chopped
1 medium onion, chopped
2 cloves garlic, minced
1 thumb-sized piece of ginger, minced
2-3 tablespoons crayfish (ground)
2-3 seasoning cubes (Maggi or Knorr)
Salt to taste
2-3 liters of water

2 teaspoons ginger powder
2 teaspoons bouillon powder or cubes
Salt to taste
2 cups chicken or vegetable broth or water
Protein of choice (chicken, beef, shrimp, etc., optional)
Vegetables of choice (peas, carrots, etc., optional)

BEST METHOD TO PREPARE JOLLOF RICE:

Parboiled Rice: It's best to use long-grain parboiled rice for jollof rice as it holds up well during cooking and absorbs flavors nicely.
