On Celiac Disease Awareness Day, I keep thinking about all the things people don’t see. 🤍
Trying to do everything you can to stay safe, while still having days when you feel terrible and don’t quite know why. Was it gluten? Was it something else? Did I miss something somewhere?
It’s learning to trust food again and finding a way to make celiac a natural part of your life without letting it take up too much space.
Sometimes celiac can feel a little like a shadow following you everywhere. You learn to live with it, you get better at it and hopefully over time that shadow becomes smaller — but it never completely disappears.
And I think that’s something only someone living with celiac truly understands. 💕
Living with celiac disease means being alert. We check labels, ask questions, think about cross-contact and sometimes analyse every bite before we eat it.
And we need to. Gluten is a real threat when you have celiac disease.
But what happens when your body stays on high alert even when you’re safe?
Fight or flight is part of our natural stress response. It’s there to protect us. But we’re not meant to stay there all the time.
The other side is often called rest and digest — the state where your body can slow down, digestion can do its job and your system can focus more on rest and recovery.
The goal isn’t to eliminate stress or never go into fight or flight. It’s to help your body recognise when the danger has passed and find its way back to calm.
Supporting your nervous system is really about creating more moments of safety and calm throughout your day — giving your body opportunities to slow down, recover and shift out of constant alert mode.
Because living well with celiac is about more than avoiding gluten. 🤍
It’s also about learning to feel safe again.

My own story 💕

I spent years thinking celiac disease was just about avoiding gluten.
It isn’t.
It’s also about nutrient deficiencies, gut healing, eating out, travelling, cross-contamination and learning how to enjoy food again without fear.
That is why I created this guide,
to fill the gap between simply
avoiding gluten and building a nourishing gluten- free life that truly supports healing.

Think you’re eating gluten-free? You might still be missing these hidden sources.
For many people with celiac disease, it’s not the obvious foods that cause problems. It’s the little things most of us never think to question.
Some hidden sources of gluten can be surprisingly easy to overlook, even when you’re doing your best to stay safe.

Holidays should be about making memories, not constantly worrying about your next safe meal. 🤍
Travelling with celiac takes more than packing a suitcase. It means planning ahead, researching restaurants, packing emergency snacks and always thinking one meal ahead.
Except when I go home to Norway. 🇳🇴
My mum is basically a full all-inclusive gluten-free resort. ❤️ Every meal is safe, every snack is waiting for me and I don’t have to think twice.
Thank you, Mum ❤️ That really is the greatest luxury I can imagine.
For every other trip, I’ve learned a few things that make travelling with celiac so much easier. I share them in my latest blog post.

Most people think coeliac disease is rare.
It isn’t.
Around 1 in 100 people are affected, yet many remain undiagnosed for years.
Symptoms can range from digestive issues and fatigue to brain fog, nutrient deficiencies, skin problems, joint pain, infertility, anxiety and many others.
Because the symptoms can look so different from person to person, coeliac disease is often overlooked or mistaken for something else. 💚

Newly diagnosed with celiac disease? Or still struggling despite being gluten-free?
I know how overwhelming it can feel. After my own journey of living with celiac disease for more than 15 years across three generations, I realized that “just eat gluten-free” is often not enough.
That’s why I created Embracing Gluten-Free Living. It is a practical guide designed to help you feel less overwhelmed and more informed 💚
I truly believe that this guide can help anyone who has been newly diagnosed with celiac disease. There are so many things I wish someone would have told me earlier. This is the guide I wish existed 16 years ago when I finally got diagnosed after years of struggling. I really want to spread awareness beyond „just don't eat gluten". https://thatgutfeeding.com/

People often ask: „what happens if you eat gluten?“
Even the tiniest crumb - something invisible to the eye - set off a chain reaction inside my body.
It might not look dramatic from the outside,
but on the inside, my immune system is attacking my small intestine.
It leaves me completely drained — foggy, nauseous, aching and exhausted.
Sometimes it takes days or even weeks to recover.
So when I double-check ingredients, ask about cross-contact, or seem “too picky,”
it’s not about being difficult - it’s about staying safe.
Celiac looks different for everyone.
Some people have visible reactions, some don’t.
But one thing is always true:
As soon as gluten enters a celiac’s body, the damage begins - whether you can see it or not.
I just wish more people knew that it’s real, it’s serious and it matters 💚

I wish someone had told me sooner that celiac is rarely a solo act 💕
