Just making tonight's dinner and realise I may have gone a little overboard on the veg!!
If you're busy or in a rush though, I do find that using a food processor to grate veg saves a load of time and means the kids are more likely to eat the rainbow 😊. Any top tips/recipes for healthy family meals?

🎉🎉Happy New Year everyone! I hope you've all had a wonderful Christmas and New Year despite the circumstances.
Now that the New Year is finally here, what are your goals for 2021? Rich and I are definitely on a health kick and giving up the booze for January. Are you also planning a healthy start to the year? Do you want to eat better and feel stronger but don't really know how to do so in a healthy way?
I have a Masters in Exercise and Nutrition Science and am a qualified Personal Trainer and Certified Nutrition Coach. How many veggies can I pack into tonight's meal? It feels lazy to use the food processor, but grating everything guarantees the kids eat them all and minimises prep time...instant healthy bolognese 😁

Tried out the new ice cream maker we bought today...this heavenly chocolate peanut ice cream is vegan, delicious and pretty nutritious!! Raw cacao powder, coconut milk, peanut butter and maple syrup. So, so easy!!

Turns out the kids loved this dinner too... sate chicken with a homemade sate dipping sauce, rice noodles and plenty of 'trees'! Great balance of protein, carbs, good fats and micronutrients
