CafΓ©-Styles lunch today! π Top-Tip: I don't ever cook GF muffin-splits in the toaster! The BEST way is to spread them with Olivani (or any DF spread) FIRST, then grill them in the oven! ππ SO GOOD! Stops them being dry or overly crunchy. We also "toast" GF bagels and burger-buns the same way, rather than eating them as us or trying to get them in the toaster. Try it and let me know how it goes! ππ

Sometimes I prefer my breakfast eggs as ! ππ The trick to these is a LOW heat and a good non-stick pan! And make them SMALL - pikelet size!
I actually make my batter in a smoothie blender. Just the usual base (2 eggs plus 1 banana) plus a dash of , 1 tsp , a pinch of and 1/4 tsp of .
The I cooked with a little bit of and I've topped my tasty stack off with and a wee extra drizzle of syrup.

Sorry I've not been super active on here lately. I think sometimes I just need to not have such high expectations on my content and then I could just enjoy being on here! β€οΈ
Also, to be fair I took a bit of a hiatus because I'm little over the negativity that's been crowding Social Media this year. And I struggled being in that space and felt it snuffing my light. But it's time to push back and let the light out because the world needs it now more than ever!
Always love you all even if you don't see me much all the time. ππ

Super Easy that's PACKED with ! Perfect for a cold autumn/winter evening! ππ
INGREDIENTS...
β
4 whole boneless chicken thigh fillets
(free range if ya can!)
β
2 Tbsp garlic infused olive oil
β
2 tsp curry powder
β
1 tsp ground turmeric
β
1 chicken stock cube (dissolved in 1 cup of
boiling water)
β
3 carrots - grated
β
2 cups of frozen broccoli rice
β
1 cup of frozen corn
β
2 cups of finely sliced fresh baby spinach
β
The portion of one can of
home-brand coconut cream (tip it upside
down, open it, pour off the water and use
the rest)
β
1 Tbsp of Pure Maple Syrup
β
2 cups of cooked brown rice
METHOD...
Heat oil on a medium heat and add curry-powder and turmeric, stir until fragrant (aprox 2mins).
Add chicken thighs and sear each side for 1-2 mins. Push to the side.
Add grated carrot and stir until coated in remaining oil/spices mixture. Bring chicken back to centre of the pan. Add dissolved chicken-stock/water. Cover and let simmer for 2mins.
Add broccoli and corn. Stir through. Cover and let simmer for 15 mins. Keep an eye on the moisture level, if it starts to stick add a wee bit more water.
Add coconut cream stir through. Add rice stir through, cover and simmer for 2-3 mins.
Add fresh spinach, stir through until wilted.
Serve and enjoy! Serves 4.
If you prefer you can dice the chicken before cooking, if so - reduce simmer time from 15mins to about 5mins or until chicken is cooked.

My middle nail on my left hand NEVER grows... Until now.... works on nails too!
My middle nail has always split just right of centre. I'd occasionally get it to grow for a little bit by taking loads of fibre... But I've had fibre twice in the last few months and.... TA-DA! β€οΈπ The seam is still there if you look closely but it's getting stronger all the time! π
