The BEST way is to spread them with Olivani (or any DF spread) FIRST, then grill them in the oven! πŸ˜‹πŸ˜‹ SO GOOD! Stops them being dry or overly crunchy. We also "toast" GF bagels and burger-buns the same way, rather than eating them as us or trying to get them in the toaster. Try it and let me know how it goes! πŸ‘ŒπŸ‘Œ

Sometimes I prefer my breakfast eggs as #pancakes! πŸ˜‹πŸ˜‹ The trick to these is a LOW heat and a good non-stick pan! And make them SMALL - pikelet size!

I actually make my batter in a smoothie blender. Just the usual base (2 eggs plus 1 banana) plus a dash of #cinnamon, 1 tsp #Fibergy, a pinch of #bakingsoda and 1/4 tsp of #AppleCiderVinegar.

The #blueberries I cooked with a little bit of #puremaplesyrup and I've topped my tasty stack off with #powderedstevia and a wee extra drizzle of syrup.

Super Easy #chickencurry that's PACKED with #hiddenveggies! Perfect for a cold autumn/winter evening! πŸ˜‹πŸ˜‹


βœ… 4 whole boneless chicken thigh fillets
(free range if ya can!)
βœ… 2 Tbsp garlic infused olive oil
βœ… 2 tsp curry powder
βœ… 1 tsp ground turmeric
βœ… 1 chicken stock cube (dissolved in 1 cup of
boiling water)
βœ… 3 carrots - grated
βœ… 2 cups of frozen broccoli rice
βœ… 1 cup of frozen corn
βœ… 2 cups of finely sliced fresh baby spinach
βœ… The #thickened portion of one can of
home-brand coconut cream (tip it upside
down, open it, pour off the water and use
the rest)
βœ… 1 Tbsp of Pure Maple Syrup
βœ… 2 cups of cooked brown rice


Heat oil on a medium heat and add curry-powder and turmeric, stir until fragrant (aprox 2mins).

Add chicken thighs and sear each side for 1-2 mins. Push to the side.

Add grated carrot and stir until coated in remaining oil/spices mixture. Bring chicken back to centre of the pan. Add dissolved chicken-stock/water. Cover and let simmer for 2mins.

Add broccoli and corn. Stir through. Cover and let simmer for 15 mins. Keep an eye on the moisture level, if it starts to stick add a wee bit more water.

Add coconut cream stir through. Add rice stir through, cover and simmer for 2-3 mins.

Add fresh spinach, stir through until wilted.

Serve and enjoy! Serves 4.

If you prefer you can dice the chicken before cooking, if so - reduce simmer time from 15mins to about 5mins or until chicken is cooked.

#ChiaPudding ...
3 Tbsp thick #coconutcream
500mls #unsweetenedalmondmilk
1 tsp #puremaplesyrup
6 Tbsp #chiaseeds

Blend milk, coconut cream & maple syrup in a blender until well combined. If it's not mixing through you might need to VERY SLIGHTLY warm the mixture.

Split liquid across three jars/parfait-cups.

Add 2 Tbsp of chia seeds to each cup. Stir. Let sit for five minutes. Stir again. Refrigerate for 1hr or overnight. Stir again on removing from fridge.

Top with fruit if your choice and whole-food chocolate sauce (just melt a little bit of coconut oil and stir in some cocoa powder and pure maple syrup πŸ‘Œ).

My hair started falling out/thinning about a year ago... Early menopause is awesome! πŸ€¦β€β™€οΈ I never said anything because I figured it was just a fact of life... 😫 I was taking awesome nutritional supplements and looking after myself so didn't really think there was anything I could do... πŸ€·β€β™€οΈ But I'd be lying if I said I didn't feel sad every time I pulled my hair up and saw the increasing amount of scalp visible at my temples... 😭😭

In recent months I've been learning about how I can #ACTIVATE the anti-aging pathways in my body and started applying what I've been learning... (Haven't changed my haircare routine at all and I'm taking LESS supplements than I was before!)...

And I have to say... Glum days looking in the mirror are being replaced with growing excitement! 😍 (#PunIntended πŸ˜‚).

BTW... No filter and both photos taken 3 days after washing my hair...

Oh my goodness! Who's been back to the gym/yoga/pilates? Felt #wonderful and #terrible to be back at yoga today! 😜

Wonderful because my body was in desperate need of it. I don't know about anyone else but I can't successfully practice at home, too many things screaming "attend to me" and people in my space. πŸ€¦β€β™€οΈ

Terrible because I HAVEN'T practised more than 2x this whole lockdown and daily walks (well, MOST days! 😜) just don't limber up or strengthen my body the same way! 😭

But the wonderful thing about yoga is you come as you are and leave lighter than when your arrived! Anyone else #FeelMe on this? πŸ§˜β€β™€οΈ

YUUUUUUUM!!! Ok, best cookies I've come up with yet! (Recipe πŸ‘‡πŸ‘‡) These are soft and fudgy and GOOOOOD!! AND they don't have any egg!! πŸͺπŸͺπŸͺ

We've been g/d free for over ten years but Abbigail really struggles with egg too. 😒πŸ₯š 😒 I've never really found an egg free recipe that gets it quite right in terms of taste and texture. 😭😭

But I think I might be onto something here! I didn't measure exactly (so bad at measuring!!!) But best as I can tell, this is what I did....

Preheat oven to 160 degrees Celsius...

1/3 cup #Cacavo (you could probably use coconut oil or olivani).
1/3 cup #RawHoney
1 mashed #Banana
1 tsp #VanillaEssence
1/2 cup good quality dark #CocoaPowder
1 cup #GF #SelfRaisingFlour
2 cups #GroundAlmonds
1/2 tsp #BakingSoda
1 pinch #PinkSalt
1 Tbsp #UnsweetenedAlmondMilk
1/2 cup dark #ChocolateChips (use #SugarFree if you prefer)

Put honey, banana, cacavo and vanilla in a large bowl and beat till creamy (like creaming butter and sugar).

Add cocoa powder and stir through with a wooden spoon untill well combined. Add salt, baking powder and GF flour and stir through until well combined. Add ground almonds, stir till combined. Add as much of the almond milk as you need (1 tsp at a time) to have a sticky but rollable cookie dough. Stir till you have desired consistency. Stir through chocolate chips.

Line a baking tray with baking paper. Grease and flour baking paper.

Roll dough into balls slightly larger than a golf ball (you may need to flour your hands to do this) and place on prepared tray. Flatten slightly with fingers.

Bake for approximately 12 mins. Cookies should be slightly soft to the touch when done. Remove from oven and allow to cool. Enjoy or store in pantry/freezer until needed. πŸͺπŸͺπŸͺπŸͺπŸͺ

Gluten and I are not friends, not really. But sometimes.... I break the rules.

Porridge might seem like a REALLY BORING breakfast but when it's something you don't eat it's amazing how much something this simple can appeal! Oats are such a NOURISHING breakfast! Their GF counterparts have nothing on the real thing when it comes to nutrition (So I very rarely eat those either). Paleo-porridge is great but it's actually an entirely different food!

This morning I wanted good old fashioned Scottish Porridge! And it was GOOOOOOD!!! 😜

I miss the ease of a veggie-sticks, a hot-chicken from the supermarket and hot chips from the F&C shop if it's necessary (don't do it often but my goodness it's helpful when you need to!).
I miss going up town. πŸ›οΈ
I miss the library. πŸ“š
I miss getting petrol. β›½

It could be worse though...

We could be locked down so tight we can't go outside unless we have papers giving us permission to walk out dog (if we have one)...

We could be living in a tiny apartment...

The weather could have been like this every day for the last five/six weeks....

We could have tens of thousands sick and hundreds dying...

We could still be at level 4... (Even though level 3 feels exactly the same so far psychology it helps to know we're at 3!)

But I just want to say, it's #okay to #feelALLtheFeels: good and bad. I'm the optimistic one in our house, it takes a lot for me to feel grey but even I have grey days, and that's ok. ❀️ πŸ§˜β€β™€οΈ ❀️

Here's to tomorrow being a better day!! ❀️❀️

Andrew was healthy but a struggling novice runner and at his wits end as to why his wife and daughter were so sick.

Abbigail was constantly at the Drs for antibiotics for chest and ear infections. She had 25 prescriptions for oral antibiotics in the first four years of her life.
