οΈSteamed CASSAVA Cake | π3 Ingredients Onlyπ§‘
Ingredients:
β’ 4 cups grated cassava if grated
β’ 2 ΒΎ cups coconut milk
β’ 1 Β½ cups sugar + ΒΎ cup
Methods:
Peel the cassava, cut into pieces and wash well.
Grate or scrape the cassava until it becomes fine.
Squeeze well to remove some juices. Let it sit the juice for 20 minutes. 20 minutes later....separate the juice and starch. discard the juice.
Put the starch from the juice in the squeezed cassava. Add the sugar and coconut milk. Mix until well blended and set aside.
Heat the pan on medium heat. Add the sugar ΒΎ cup, cook until caramelized and amber in color over low heat. Transfer quickly to baking pan or llanera. When it cools down, add the cassava mixture on top of caramelized sugar. Flatten to spread evenly. Cover with aluminum foil.
Prepare the steamer with water. Place the baking pan on the steamer plate. Cover and steam for 50-55 minutes (baking pan) and 25 minutes for (small llanera). Set on medium heat. Let it cool. Turn over and slice as desired.

οΈ BANANA Donut Rollsπ
Ingredients:
β’ 4 pcs ripe banana saba, large sized
β’ 1 ΒΎ cups all purpose flour
β’ 1 Β½ tsp baking powder
β’ 33g powdered milk
β’ ΒΌ - β
cup water
β’ Β½ cup glutinous rice flour
β’ cooking oil
β’ Just choose from "cheese or ube halaya" for the fillings
β’ powdered milk and powdered sugar (coating)
Methods:
Mash the banana until smooth. Add flour, baking powder and powdered milk. Mix well until combined. Add water little by little while mixing. Then add the glutinous rice flour and knead well until smooth. Scoop 2 tbsp of mixture on parchment paper and fold the parchment in half. Flatten with a rolling pin or glass. Put the fillings.
Roll the dough with the filling and put on a greased tray. Fry in heated oil (the donut does not need to be submerged in the oil). Flip to cook the other side. Fry until golden brown or until the dough is cooked. Remove from pan and let it cool. Coat with powdered milk and sugar.

Choco flavor
β’ ΒΎ cup cocoa powder

cup brown sugar

β’ 1 egg
β’ 1 tsp vanilla
β’ 1 cup all purpose flour
β’ 2 tsp baking powder
β’ Β½ tsp salt
Mix until combined. Set aside
Ube flavor
β’ 1 egg
β’ ΒΌ canola oil or vegetable
β’ 1 Β½ tsp ube flavor
β’ ΒΎ cup brown sugar
β’ 1 β
cups all purpose flour
β’ 1 Β½ tsp baking powder
β’ ΒΌ tsp salt
Mix until combined. Set aside
Buko-Pandan flavor
β’ ΒΎ cup brown sugar
β’ 1 egg
β’ ΒΌ cup canola oil or vegetable
β’ 1 tsp buko pandan flavor
β’ 1 tsp vanilla
β’ 1 β
cups all purpose flour
β’ 1 Β½ tsp baking powder
β’ ΒΌ tsp salt
Mix until combined. Set aside
Methods:
Put each flavor in a container with a lid. Rest in the freezer for 30 minutes.
Scoop about 1 tbsp of the mixture, then mold into a circle or ball. Coat with powdered sugar. Place on a baking tray lined with parchment paper and flatten lightly. Bake for 10-12 minutes at 180Β°C.
Cooking in the pan [option]
Heat the pan first then add the balls. Cook for 20-25 minutes on very low heat.

Maligat na KALAMAY | Sticky Rice Cakeπ€
Ingredients:
β’ 2 ΒΎ cups glutinous rice flour/ malagkit powder
β’ 5 cups coconut milk, second extract
β’ 1 cup rice flour
β’ 2 cups sugar
β’ 2 cups coconut milk, first extract [for latik]
Methods:
In a bowl, combine 2 Β½ cups coconut milk, glutinous rice flour and rice flour. Add ube flavoring if desired. Mix well until smooth. Set aside.
In a heated pan, pour 2 Β½ cups coconut milk and bring to a boil. Sprinkle with salt and add the batter mixture. Stirring continuously until thickened. Cooking time is 45 minutes - 1 hour on low heat. Transfer to a greased banana leaf tray or container.
[For Latik or Toasted Curds]
Put the coconut milk in the pan and bring to a boil. When it settles and thickens, lower the heat. Stir frequently until the latik separates from the oil.
Place on top of sticky rice cake.

οΈPALITAW SA GATA | Sweet Flat Rice Cakeπ
Ingredients:
β’ 4 cups glutinous rice flour
β’ 1 Β½ cups water
β’ β
cup sesame seeds
β’ 3 cups coconut milk
β’ ΒΎ cup sugar
β’ jackfruit strips
Methods:
Put the glutinous rice flour in the bowl, add the water gradually. Knead well until smooth. Form into a ball and flatten. Set aside.
Toast the sesame seeds until brown. Remove from pan. Let it cool and crush the seeds. Set aside.
Put the coconut milk in the pan, boil it on high to medium heat. When it boils, put the jackfruit and sugar, stir. Cook until the coconut milk thickens. Drop the flat dough and when it floats it means it's cooked. Sprinkle with crushed sesame seeds and a bit of salt. Simmer for 2 minutes. Transfer to a serving bowl.

Try my version "Fried PORK Binagoongan" π€
Ingredients:
β’ 750g sliced pork
β’ 3 tbsp shrimp paste, I used sauteed sweet & spicy
β’ 2 large eggplant
β’ 1 tbsp fish sauce
β’ β
cup vinegar
β’ 1 cup hot water
β’ 3 tomatoes
β’ 1 medium onion
β’ 5 cloves garlic
β’ 1 thumbsize ginger
β’ ground black pepper
β’ cooking oil
β’ red chilies, long green chilies
Methods:
Heat oil in a pan over medium heat. Fry the sliced eggplant until brown. Remove from pan.
In the same pan, pan-fry the pork until browned. Add fish sauce and pepper stir fry for a minute. Add the ginger, garlic and onion, stir-fry until fragrant. Add the tomatoes, saute until soft. Add the shrimp paste, stir and cook until absorbed about 3 minutes.
Add water and vinegar, let it simmer without stirring about 3 minutes. Cover and cook until the pork is tender. Add the red and long green chilies. Follow with the fried eggplant. Simmer for a few minutes. Transfer to a serving bowl top with chilies.

No need to cook Pastillas | 3 Ingredients Onlyπ
Ingredients:
β’ 500g skimmed milk or powdered milk
β’ 390g condensed milk
β’ sugar for coating
Methods:
In a bowl, combine the condensed milk and powdered milk. Mix well until the 2 ingredients are combined. Divide into 4 portions and add flavor as desired. [This is optional]. Shape into a circle according to the desired size. Roll in sugar.

Procedure
Cut the squash in long strips then coat with cornstarch and crispy fry
