Baked Tuna Belly
with Leeks and roasted Garlic

Ingredients:
1/2 Kilo Tuna Belly
(Pat dry and marinate overnight)
Marinated Sauce:
100 ml Teriyaki sauce
2 tablespoons Maple syrup
2 tablespoons Oyster sauce
2 tablespoons Banana Catsup
2 tablespoons roasted garlic chopped
1 stalk Leeks chopped
Salt and Pepper according to your taste
Cooking Time:
150° for 45 minutes in oven

Scallion stalks
Golden pompano, cleaned and pat dried
Ginger, julienned
3 tablespoons oil
1 head garlic, minced
Green onions, sliced
1 tablespoon soy sauce

In a heat-proof plate, line scallion stalks 1 ½ inches apart. Place the pompano over the scallions. Stuff ginger in the insides of the pompano belly.

Place the fish in the steamer when the water is boiling. Steam on high heat for about 8 to 14 minutes or until the fish is cooked and easily flake with a fork.

Meanwhile, in a small saucepan, heat oil. Add garlic and cook until golden brown and aromatic.

Carefully remove the fish from the steamer. Discard liquid and scallion stalks.

Garnish the fish with green onions. Pour the hot oil and toasted garlic over the fish and drizzle with soy sauce.
