It's a very rich source of protein and other minerals.
Okpa is one of the most healthiest food you can eat without guilt and for fitfams can eat in moderation.
Okpa can be eaten with pap, custard, or even enjoyed like that .

Carbs are not your problem, stop fighting carbs...

There are 2 types of carbohydrate foods..

Complex carbs and simple carbs.

Complex carbs has low glycemic index (sugar content) because they are slow in digestion..

Simple carbs are high in glycemic index (sugar content) because they are easy and fast to digest..

Rice and corn are complex carbohydrate foods but when they are processed, they become simple carbohydrate foods, fiber has been drastically reduced.

Bean, yam, plantain and potato are complex carbohydrate foods...they have their fiber intact when in raw form.

When you eat one complex carbohydrate food and one simple carbohydrate food, you are safe...it's well balanced.

When you eat 2 simple carbohydrate foods consistently, it will likely affect your blood sugar level...

When you consistently eat 2 complex carbohydrate foods, you may develop digestive issues and low metabolism...

It's best to balance your meals to avoid wahala later..

Bean and ripe plantain
Bean and yam
Bean and potatoes
These are 2 complex carbohydrate foods

Rice and plantains
Rice and potatoes
Beans and banana
These are simple and complex carbohydrate foods..

HOW TO PROCESS SWEET POTATOES TO FLOUR FOR BAKING

1. Peel your sweet potatoes

2. Wash your sweet potatoes thoroughly

3. Soak the sweet potatoes for 3days inside water and be sure that the water is above the sweet potatoes each day.πŸ‘Œ

4. Change the water daily to prevent the water from smelling bad.Drain the water from the sweet potatoes and put in a fresh water every day. This process takes out the sweetness from the potatoes completely πŸ‘Œ

5. On the third day, the sweet potatoes will be soft.
Drain water from it and put all the sweet potatoes inside a sack.

6. Use a big stone or any heavy object to apply pressure on the sack to completely drain the water or you can use a mortal,by placing it at the top of the sack to ensure that no water remains in the potatoes
If you have a dehydrator you can use it

7. When the water is drained, Sun dry the sweet potatoes for days till it's very dry or you dehydrate it.

8. Take the sweet potatoes to the engine and grind it to smooth powder.

9. Filter the potatoes flour if needed

10. It could be made into swallow just as semo is made.

Uses of Sweet potatoes flour
1. It can be used as a substitute for Allpurpose flour
2. You can use it for Pastries,cakes,biscuits etc
3. And guess what?it can be used to make bread

HOW TO MAKE A PERFECT PARTY JOLLOF RICE

βœ“its quite easy and you wouldn't go wrong if your pepper mix is in the right proportion

βœ“ TOMATOES PURΓ‰E
In attempt to make our jollof rich rice,we blend a lot of tomatoes to the tomatoes purΓ©e used in making the rice.

βœ“To make party jollof rice tasty, just add a few tomatoes scoop with a lot of red bell pepper(Tatashe) and scotch bonnet pepper (atarado),depending on the quantity of rice you are making. The goal is for the red pepper to be more than the tomato

This purΓ©e mixture is responsible for both the taste and color of party jollof rice

βœ“ Steam your jollof rice
The best way to cook jollof and get that texture is by steaming your rice on medium to low heat with water on same level as rice.

βœ“Always wash your rice countless times till the water run clear.
Always use equal water with your rice or lesser water when making party rice. Cover the pot well or you can use foil/bag with a low or lowest heat because it’s the steam that cooks party jollof not high heat or excess water let the steam infuse into the rice. The more the steam is infused into the rice,the sweeter and better.

βœ“Butter also add some sort of flavor and spark to the party jollof. So make sure you add butter and onion at the end of the cooking.

Not only does the butter give additional flavor and aroma,it gives the jollof the smooth, tasty flavor associated with party jollof.

Finally let the rice burn😁, so it can infuse that signature burnt taste into the rice, what is a party jollof without the burnt infusion.

Homemade Condensed Milk πŸ˜‹πŸ˜‹

Ingredients:
1 cup of milk powder
1 cup of sugar
1/4 cup of water
1 tablespoon of vanilla essence

Prep:
In a pot, combine sugar and water over medium-low heat until the sugar is completely dissolved. Do not allow the mixture to boil or brown.

Once the sugar is dissolved, transfer it to a blender (preferably in a glass jar).
Blend for a minute, then add the vanilla essence.

Gradually add the powdered milk while still blending the mixture.
After adding all the milk powder continue blending for another five minutes.

To avoid straining the blender, you can turn it off every minute for 30 seconds. If the mixture is too thick, add 2 or 3 tablespoons of water while blending
Once ready, transfer the mixture to a glass jar, let it cool, and store it in the refrige.
