Time to pickle some beets and dry some onions.

I've struggled with admitting to myself (let alone sharing it with the world) that I eat meat now. I spent years advocating for animal's rights just to find myself allergic to most of the foods I used to eat. I've suffered from stomach aches and bloating for most of my adult life and have finally found a diet that makes me feel GOOD. I've been feeling such shame but today as I was eating this beautiful salad, I thought to myself "Scew it! I cannot continue to feel bad about something that makes me feel good and whole for the first time in years!"

This salad had quinoa, every vegetable I could find, dried fruit, fresh aromatic herbs, cold chicken breast and a honey mustard dressing. It was divine.
