Crema is just a characteristic of espresso,
not a definitive quality score.
A gorgeous, thick layer of foam can still hide
a bitter, undrinkable shot, while a less
dramatic pour might actually taste incredible.
At the end of the day: Taste the espresso.

88°C (190°F): Crisp & clean. Bright, lively acidity
with delicate sweetness starting to.

91°C (196°F): The Sweet Spot! Perfect balance,
