Cherry & Almond – One Scent, One Heart

Cherry and almond may seem worlds apart, one a fruit, the other a nut, yet their scents are strikingly alike. The connection lies in benzaldehyde, an aromatic compound released when amygdalin in cherry pits and bitter almonds breaks down under heat or enzymes. In bitter almonds, this reaction produces the intense almond aroma we recognize, while in Maraschino cherries it gives that sweet-bitter cherry note so familiar in desserts and liqueurs.

Even the fragrance of marzipan, the classic almond-and-sugar confection, is essentially the soft, nutty sweetness of benzaldehyde. Different origins, yet bound by the same molecular heart, cherry and almond share a scent so close it is often impossible to tell them apart.

Cherry & Almond – กลิ่นเดียวกันจากสารตัวเดียว

เชอร์รี่และอัลมอนด์ แม้จะเป็นผลไม้กับถั่วที่ต่างสายพันธุ์ แต่กลับมีกลิ่นคล้ายกันอย่างน่าประหลาด ความเชื่อมโยงนี้เกิดจากสารหอมที่ชื่อว่า benzaldehyde ซึ่งเกิดขึ้นเมื่อสาร amygdalin ในเมล็ดเชอร์รี่และอัลมอนด์ขม (bitter almond) แตกตัวด้วยเอนไซม์หรือความร้อน จนปล่อยกลิ่นหวานอมขมที่เราคุ้นเคยออกมา

ในอัลมอนด์ขม benzaldehyde ทำให้เกิดโทนกลิ่นอัลมอนด์เข้มชัด ขณะที่เชอร์รี่พันธุ์ Maraschino เองก็มีกลิ่นหวานอมขมแบบเดียวกันจาก benzaldehyde เช่นกัน และหากเรานึกถึงกลิ่นของ marzipan ขนมหวานทำจากอัลมอนด์บดกับน้ำตาล ก็แทบไม่ต่างอะไรกับโทนกลิ่นเชอร์รี่ในน้ำเชื่อมหรือขนมต่าง ๆ นั่นเพราะทั้งหมดมี benzaldehyde เป็นหัวใจร่วมกัน ต่างต้นกำเนิดแต่กลับมีกลิ่นที่แทบจะแยกไม่ออกในโลกของกลิ่นหอม

ผมว่า น้ำหอมชา สดชื่น มันก็วนอยู่แค่นั้น
คือชา+ซิตรัส ไม่ใหม่เลย ก็หาได้ทั่วๆไป

แต่ความหาได้ทั่วไปนี่แหละ ผมว่า พอมันมีซักขวดที่โดดออกมา มันเลยพิเศษมากจริงๆ

สำหรับผมนั่นคือ Low-Key จาก Odyssey.bkk ครับ

ตอนเขียน Post นี้ก็ไม่แน่ใจว่าของยังเหลือมั้ย ยังไงอาจจะต้องทักไปหาแบรนด์ครับ

ผมว่า Low-Key คือชาที่ดี สงบ สดชื่น
แล้วผมไม่รู้ทำไม มันก็มีแค่นี้ แต่ฉีดลงผิวแล้วมันน่ารักจัง

Low-Key คือชาอู่หลงที่มีความ Soft ละมุน บวกกับมวลดอกไม้ขาวอย่างมะลิ ที่ปรุงมาอย่างดี เบาสบาย Whimsy และแทรกไปด้วยความเขียวสดชื่นของ Petitgrain

ถ้าให้ผมเลือกชาแค่ 3 ขวด Low-Key คือไม่หลุดแน่ๆครับ

ทาง Odyssey เค้าจะ Rebrand ครั้งใหญ่นะครับ ซึ่งถึงแม้ Low-Key จะได้ไปต่อ
แต่ทางเจ้าของแบรนด์บอกว่า กลิ่นก็จะไม่เหมือนเดิมแล้ว

What Is “Pure Sake”?

And does that mean the ones we usually drink aren’t pure?

I actually learned the answer from a sake importer,
not all sakes are made equal.
The finest ones often begin with the word Junmai (純米酒).

Junmai literally means “pure rice.”
It refers to sake made only from rice, water, yeast, and koji,
without any added alcohol or other ingredients.
This simplicity allows the true flavor of the rice and the fermentation process to shine through,
resulting in a rich, complex aroma and depth of taste.

What makes Junmai stand out is its unique fruity note called Ginjo-ka,
a natural aroma that brings out tones of banana, apple, pear, and pineapple,
fresh, clean, and refined.

This pure and delicate character has even inspired modern perfumery,
where sake accords are often blended with florals, fruits, and cedarwood
to create luminous, elegant scents.

อะไรคือ “สาเกบริสุทธิ์”?

แล้วที่เราดื่มกันอยู่…ไม่นับว่าบริสุทธิ์เหรอ?

ผมก็เพิ่งรู้เหมือนกันในวันที่ได้คุยกับคนนำเข้าสาเก
ว่าสาเกมีหลายเกรดมาก แต่สาเกเกรดดีมักจะขึ้นต้นด้วยคำว่า Junmai (純米酒)

คำว่า Junmai แปลตรงตัวว่า “ข้าวบริสุทธิ์”
หมายถึงสาเกที่ทำจากแค่ ข้าว น้ำ ยีสต์ และโคจิ เท่านั้น
ไม่มีการเติมแอลกอฮอล์หรือส่วนผสมอื่น ๆ ทำให้สะท้อนรสชาติแท้ ๆ ของข้าว
และกระบวนการหมักอย่างบริสุทธิ์ ผลลัพธ์คือรสชาติที่เข้มข้น ละเมียด
และมีกลิ่นหอมซับซ้อนอย่างเป็นธรรมชาติ

สิ่งที่ทำให้ Junmai พิเศษ คือกลิ่นผลไม้ที่เรียกว่า Ginjo-ka
ซึ่งเกิดขึ้นเองตามธรรมชาติจากการหมัก ให้โทนกล้วย แอปเปิ้ล

Latakia – A Scent Born from Memory

The inspiration for Latakia didn’t come from anywhere far. It began when I wanted to create a collection built around to***co as the heart of the scent and Latakia was the first thing that came to mind. It’s a smell that stayed with me ever since my trip to Istanbul, walking through the spice market where voices filled the air and the aroma of spices surrounded me. Then suddenly, a distinct smoky note of burnt to***co drifted by.

The source came from an old man smoking a long pipe, sitting quietly in a corner of the market. People passed by without noticing, but that scent remained in my memory for years. Later, I found out that what I had smelled was Latakia to***co.

So I recreated that smoky memory, blending to***co smoke with honey, dried fruits, and resin to capture the warmth and depth of that moment in a fragrance like no other.

แรงบันดาลใจของน้ำหอม Latakia ไม่ได้มาจากไหนไกล แต่เป็นตอนที่ผมอยากออกน้ำหอม Collection ที่มีใบยาสูบเป็นตัวเอกของกลิ่น และตัว Latakia ก็ลอยเข้ามาในหัวเป็นสิ่งแรก เพราะเป็นกลิ่นที่ติดอยู่ในใจตั้งแต่สมัยที่ไปเที่ยว Istanbul ในตลาดเครื่องเทศ เสียงเจรจาซื้อขายดังระงม กลิ่นเครื่องเทศลอยอยู่ในบรรยากาศ แล้วอยู่ดีๆก็มีกลิ่นของใบยาสูบที่มีกลิ่นไหม้ชัดเจนลอยมาเตะจมูก

ที่มาของควันนี้ลอยมาจากไปป์ขนาดยาวที่ชายชราข้างทางนั่งสูบอยู่ในซอกมุมของตลาด คนเดินผ่านไปผ่านมาโดยที่ไม่ได้สนใจอะไร แต่กลิ่นนั้นก็ยังติดอยู่ในความทรงจำจนถึงวันนั้น จนต้องไปหาว่าจริงๆแล้วกลิ่นนี้มันมาจากไหน จนได้รู้ที่มาว่ามันคือ "Latakia" นั่นเอง

ผมเลยหยิบเอากลิ่นยาสูบรมควันนี้มาผสมกับกลิ่น Honey, Dry Fruit และ Resin กลายเป็นกลิ่นควันในความทรงจำที่ไม่เหมือนใคร

แล้วทุกคนล่ะครับ มีกลิ่นควันในความทรงจำกันบ้างรึเปล่า ?
