ШОКОЛАДНЫЙ МЕДОВЫЙ ТОРТ СО СМЕТАННЫМ ШОКОЛАДНЫМ КРЕМОМ.
Ингредиенты на коржи:
мука - от 300 грамм и больше
какао - 30 грамм
сахар - 150 грамм
мёд - 90 гр.,
масло сливочное - 100 грамм
яйца 2 штуки ( я использовала 4 желтка, белками украшала торт),
сода 5 грамм
разрыхлитель 5 грамм,
соль - 1/2 чайной ложки,
ванилин - щепотка,
мускатный орех молотый - щепотка ( на ваше усмотрение).
В кастрюле с толстым дном соединить яйца, соль, сливочное масло , мёд и сахар . Тщательно размешать и поставить на средний огонь. Когда масло растопится, добавить соду и проварить смесь около 3 минут, постоянно помешивая. Снять с огня. Добавить сюда какао и 100 грамм муки. Размешать и немного остудить эту смесь. Потом добавить разрыхлитель, ванилин и мускатный орех. Снова размешать. Мне еще пришлось всыпать 220 грамм муки. Всего у меня ушло на весь замес 320 грамм муки.. Тесто было общим весом 750 грамм. Я разделила его на 8 частей. Выпекала каждый корж при температуре 170 градусов около 4 минут. ( один корж у меня пережарился и мы его просто съели ))))). Диаметр коржей 21 см.
Для крема:
сметана жирная - 600 грамм ,
сливочное масло - 50 грамм,
сахарная пудра - 50-60 грамм ( на ваш вкус),
горький шоколад - 150 грамм.
Я брала 860 грамм сметаны 28% . Отвешивала ее ночь. У меня получилось 600 грамм очень густой сметаны. Если вы не любите жирный крем, то можете просто взять сметану 22-25%. В посуде с толстым дном я соединила масло и поломанный на кусочки шоколад. Растопила массу до однородности, постоянно размешивая. Дальше нам надо поставить эту шоколадную глазурь в холод, чтобы она охладилась. минут на 30. Шоколадная масса должна быть холодной, как и сметана, чтобы при объединении, крем не расслоился. Я достала глазурь из холодильника, Она была уже хорошо застывшей. Дала ей немного постоять на столе. Потом начала взбивать миксером. Постепенно добавляя сметану. Взбила до однородного состояния. Добавила сахарную пудру и снова все взбила. Крем готов к употреблению.
Собираем торт. Каждый корж смазываем кремом, равномерное его распределяя. Смазанный торт должен постоять при комнатной температуре около часа. Потом уберите его в холод. Общий вес торта без украшения составил около 1 кг 300 грамм. Далее вы сами можете решить как его украсить. Можно просто залить шоколадной глазурью. Можно украсить белковым кремом. У меня было желание украсить по-весеннему. Ведь сегодня наступила весна.
