eef stroganoff, named for the Stroganov family, is a Russian dish of beef and sauce that harkens back to Tsarist Russia. The recipe—basically a dish of sauteed beef in sour cream sauce—was initially created in the mid-1800s. While beef stroganoff enjoys worldwide popularity now, there are many regional variations. In the U.S., stroganoff is typically prepared with beef, mushrooms, onions, and a sour cream sauce. It is usually served with noodles.
This Instant Pot beef stroganoff is a classic U.S. version of the dish made with the addition of garlic. Worcestershire sauce adds tanginess, while a bit of Dijon mustard adds mellow flavor. After the beef is pressure-cooked, the noodles are added to the pot, making this version a convenient one-pot meal. The sour cream, added near the end of the cooking time, finishes the dish perfectly.
Ingredients
1 tablespoon vegetable oil
1 1/2 pounds beef sirloin, cut into bite-sized cubes
1 teaspoon kosher salt, or to taste
1/2 teaspoon black pepper, or to taste
2 tablespoons unsalted butter, divided
1 cup onion, chopped
2 garlic cloves, minced
4 ounces mushrooms, sliced
3 cups low-sodium beef stock
1/4 cup white wine, or more stock
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
12 ounces wide egg noodles
1 tablespoon all-purpose flour
3/4 cup sour cream
2 tablespoon chopped fresh parsley, for garnish

his easy Instant Pot spaghetti with homemade spaghetti sauce is nothing short of life-saving. Combining everything in the pressure cooker makes this a convenient one-pot meal, and it is ready in less than 30 minutes. While you can make this recipe in a traditional pressure cooker, with an Instant Pot you won't need to use your stovetop.
All you have to do is sauté the ground beef with the onions and garlic, add all of the remaining ingredients, set the cook time for five minutes at high pressure, and press start. A complete homemade spaghetti dinner just couldn't be easier, and you don't have to use commercially prepared sauces that have additives and preservatives you might wish to avoid.

Let it be known: This dish is simply called Quesadillas "Benedict." It has next to nothing to do with that staple of brunch menus everywhere, because that staple (while delicious) takes a long time to make! This recipe takes no time to put together, and reliably results in exactly the kind of cheesy, salsa-spiked, egg-runny goodness you get with huevos rancheros or chilaquiles. The "Benedict" part is a Mexican-spiced play on Hollandaise that only takes a minute to whip up.
Feel free to add cooked bacon, chorizo, black beans, or other protein to the finished product for an extra-filling meal.
Ingredients
1/2 cup mayonnaise
1 tablespoon lime juice
1 teaspoon Mexican hot sauce
2 tablespoons unsalted butter
2 large eggs
Salt, to taste
Freshly ground black pepper, to taste
4 corn tortillas
2/3 cup shredded cheddar cheese
1 cup salsa
Scallions, sliced, for garnish

Poaching the perfect egg may not come easy to you, but with this recipe simply poach the egg, mash the avocado, and top it all on a fresh piece of whole wheat toast. it doesn't get any simpler or more wholesome than that! Add a little Sriracha if you like it spicy! You can go really crazy and use guacamole instead of plain mashed avocado. It's a little more work, but it sure is tasty! You can also just spice it up with a little cayenne or a drizzle of your other favorite hot sauce or spice. This toast is so versatile. You can really top this toast with any kind of egg. A fried egg would work just as well. Even scrambled would be welcomed. Whatever is easier for you.
Ingredients
1/2 avocado (mashed, leave it on the chunkier side if you like!)
1 slice whole wheat bread (toasted)
1 egg
1 dash salt (to taste)
1 dash black pepper (to taste)
1 dash Sriracha (or other hot sauce to taste)
