Avocado toast may have started as a super trendy food, but the breakfast item looks like it's here to stay. It's not hard to see why: crispy whole grain bread and mashed avocado pair incredibly well together, creating the perfect crunchy, creamy bite. The possibilities for toppings are also endless! This basic recipe was inspired by the original avocado toast from New York City's Cafe Gitane, but we've included several variations here to help take your toast to the next level.
A hearty multigrain bread works best for avocado toast because it holds up underneath the thick mash and has tons of great flavor to add to the mix. But if you don't have any multigrain, feel free to use whatever loaf you have on hand. Lemon juice is an essential ingredient—not just to keep the avocado from prematurely browning, but also because the citrus boosts the overall deliciousness.
Ingredients
2 thick slices multigrain toast
1 avocado
1 teaspoon freshly squeezed lemon juice
1 teaspoon olive oil
1/4 teaspoon red pepper flakes
1/4 teaspoon sea salt, flaky if possible

Ambrosia is a fruit salad popular in Southern cooking, usually made with fruit, yogurt, and coconut, and is often made with tropical fruit, such as pineapple. This is a dairy-free, cholesterol-free, and vegan ambrosia fruit salad recipe, using tofu instead of yogurt for a low-fat but still creamy vegan ambrosia salad.
Ingredients
1 cup chopped fresh pineapple
1 cup sliced fresh apples
1 cup orange slices
1 cup strawberries (sliced)
1 cup grapes
1/2 cup shredded coconut
1 tbsp. cornstarch
1/3 cup lemon
3 tbsp. sugar
3 tbsp. orange juice
1/2 cup soft (silken) tofu (pureed)
2 tsp. grated orange zest
Optional: 1 tsp. poppy seeds

What better way to start your day than with this acai smoothie recipe, which is quick and easy to make, and will undoubtedly give you a great lift to your day.
What fruit to use is entirely up to you, but berries work the best as they are small and bursting with goodness. Their size, flavor, and juiciness help your drink to be as smooth as possible (as a smoothie should be). If you don't have frozen berries, just choose your fruits the night before, cut larger ones into pieces, add those to a zip-close bag, and freeze for the next morning.

But we can't forget the star of this show: the acai berry. Acai is a red-purple fruit that comes from acai palm trees found in South American rain forests. In this smoothie recipe, organic freeze-dried acai powder helps boost the nutrient content. Acai powder is available online, as well as in many health food stores and larger supermarkets.

Acai (pronounced a-sa-EE) are nutritious berries that grow on a species of palm in Central and South America. They have a bright, sweet flavor and are a very deep purple in color. One of the best ways to enjoy acai is to eat them as a frozen puree, almost like sorbet, topped with fresh fruit (typically bananas) and granola. This smoothie in a bowl—cold, sweet, tart, with crunch from the granola—will fill you up, cool you off, and may have all kinds of nutritional and health benefits as well, if the many claims about the health properties of the acai berry are true.

In Brazil, frozen acai is often mixed with guarana (usually in the form of syrup - xarope de guarana), a fruit from the Amazon that is also thought to have many health benefits and which contains caffeine as well. Some people add other ingredients to their acai bowls such as milk, sugar, orange juice or pineapple. We like to add frozen passionfruit puree for its tartness.
Ingredients
1/3 cup (200 grams) frozen acai puree, thawed slightly, look for "smoothie packs" in the freezer section of health food stores
2 bananas
1 tablespoon sugar
1/4 cup frozen passionfruit puree, or 1/4 cup orange juice
1/4 cup granola

The acai is pureed when it is frozen so it becomes like a sorbet. It is typically topped with granola, some kind of fruit, and honey. It's nice to mix it up with different kinds of fruits and types of granolas. Strawberries, raspberries, blueberries, and bananas are super popular fruit toppings. You can also substitute fruits like papaya, kiwi, or mango to make this tropical acai bowl even more colorful. Adding seeds like sunflower seeds, pumpkin seeds, and chia seeds are tasty additions that add some nice texture and nutrition.
There are a few brands of acai puree, and you can usually find them in health food stores. Just be aware that some are unsweetened, and some are sweetened. If you are using unsweetened, adding the pineapple and honey will sweeten the bowl. Add a little more honey
