This recipe makes delicious, melt-in-your-mouth buckwheat pancakes that are dairy-free and gluten-free to boot. They do contain eggs because eggs are not a dairy product and can be eaten by a lacto-ova vegetarian but they would not be considered vegan.
If you've never used coconut oil to top your pancakes, these are a good pancake to try it with. The coconut oil is mellow in flavor and just accentuates the sweet buckwheat flavor in the most wonderful way, especially with a drizzle of pure maple syrup.

Drama-Free Lunch
As with any pancakes, there are a zillion ways to dress these up. Slice up some fresh bananas and add them to your hotcakes, or add in any combination of berries, bacon (or vegan bacon substitute), shredded coconut, nuts, or dairy-free chocolate chips to change things up.
Ingredients
1 1/2 cups organic buckwheat flour
1/2 cup gluten-free all-purpose flour
2 teaspoons baking soda
1/8 teaspoon ground cinnamon
1 teaspoon salt
2 cups coconut milk, or almond milk, soy milk, or another dairy-free milk of your choosing
2 large eggs, lightly beaten
2 tablespoons maple syrup
2 tablespoons extra-virgin olive oil, cold-pressed if available
1/2 teaspoon vanilla extract, make sure it's pure, imitation varieties can contain gluten
1 to 2 tablespoons virgin coconut oil, for cooking and serving

If you are looking for a quick bread that isn’t too sweet, this applesauce bread is for you! The recipe uses whole wheat flour for a more robust flavor and texture. Then, some of the sugar and fat typically found in quick bread recipes is substituted with smooth, thick applesauce. You can use store bought applesauce or make your own, both taste great in this recipe. Cinnamon and nutmeg are added to the batter for a hint of fall spice. Next, the batter is given added bulk with the addition of rolled oats. Finally, chopped walnuts bring additional flavor and crunch to every slice.

Spinach, feta cheese, and Kalamata olives belong together! They taste delicious in this healthy, hearty, and wholesome breakfast wrap!
When my husband and I honeymooned in Greece we loved eating eggs with Kalamata olives and feta! The cheesy, salty, tanginess combined with freshly scrambled eggs is so delicious! The spinach adds in some green and packs a healthy punch because it is iron-rich!

Tortilla Press Hacks
This wrap is super easy to whip together on a weekday morning. You can also make a bunch of these on the weekend and then wrap them and freeze them! They can be reheated in the microwave or toaster oven. Simply scramble more eggs and have plenty of tortillas on hand! Egg whites can also be substituted. There is always a debate as to whether whole eggs or egg whites are better for you! I go for the whole eggs to get the nutrients from the yolks, but either way, packs a ton of protein!
Ingredients
2 large eggs
1/2 cup fresh spinach, roughly chopped
4 Kalamata olives, chopped
1/4 cup feta cheese, crumbled
1 1/2 tablespoons unsalted butter, diced
1 white or whole-wheat tortilla
Salt, to taste
Freshly ground black pepper, to taste

There's nothing better than munching on warm apple fritters after apple picking on a beautiful fall afternoon. But if you can't get to a local apple orchard, you can just make the warm and crispy fritters at home! They are an easy and decadent apple breakfast or afternoon snack.
The batter is extremely easy to make and comes together quickly. Frying does not have to be intimidating either. Just use a heavy bottomed pot and a candy thermometer to help you keep a close eye on the temperature. You may prefer a smaller dice, or to shred the apple. The choice is yours. Make sure to roll the freshly fried fritters in cinnamon sugar and top with a little powdered sugar for good measure.

Quick and Easy Vegan Banana Muffins Recipe
They are best enjoyed warm and right out of the oil. If you need to keep them warm for longer, just place them in a warmed oven (about 200 degrees). You can also enjoy these delicious apple fritters with a cool glass of apple cider sangria.

If you're into meal prep or want to start planning ahead for the workweek, these delicious muffins are a great grab-and-go breakfast that you can make ahead, refrigerate or freeze, and warm up in the microwave before running out of the house. Or sit down and enjoy with a cup of hot coffee. Great for kids' lunch boxes and snacks, too, they are filled with fiber from oats, and have deliciously sweet banana flavor, without the loads of sugar that come in store-bought or bakery-made treats. If you have some ripe bananas around, put them to good use and make a batch of muffins.
The deliciously crisp oat and cinnamon crumble topping on top can be optional, so if you want to keep them more for breakfast and less as a treat, skip it, but if you want a more decadent treat, go ahead and bake them with the crumble. Besides the flavor, it gives the muffins added texture and visual appeal.
