Whipped Vanilla Easter Nest Cake - light, creamy, and perfect for springtime celebrations!
Ingredients:
For the Cake:
2 ½ cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon salt
1 cup unsalted butter, softened
1 ¾ cups granulated sugar
4 large eggs
1 tablespoon vanilla extract
1 cup whole milk
For the Whipped Vanilla Frosting: 1 ½ cups cold heavy whipping cream
1 ½ cups powdered sugar
1 tablespoon pure vanilla extract
Green food coloring (gel preferred, optional)
For Decoration: Chocolate curls or shavings
Speckled candy eggs (chocolate or sugar-based)
Assorted pastel mini eggs for surrounding the base
Instructions:
Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream the butter and sugar together until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Gradually add the dry ingredients in three parts, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined—do not overmix.
Divide the batter evenly among the prepared pans and smooth the tops.
Bake for 22–25 minutes or until a toothpick inserted in the center comes out clean. Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
To make the whipped frosting, beat the heavy cream with powdered sugar and vanilla on medium-high speed until soft peaks form. Add a few drops of green food coloring and continue beating until stiff peaks form.
Level your cake layers if needed. Place the first layer on your cake plate. Spread an even layer of whipped frosting.
Repeat with the second and third layers, leaving the sides of the cake exposed for a semi-naked look.
Generously frost the top with more whipped cream, creating soft swirls and peaks.
Decoration Tips:
Pile a generous amount of chocolate curls or shavings in the center of the top layer to resemble a nest.
Nestle speckled candy eggs of varying sizes and colors on top of the “nest.” For a realistic look, vary the placement and angle of the eggs.
Add a few more mini eggs around the base of the cake, scattered among extra chocolate curls for a completed look.
If desired, gently brush some candy eggs with a damp cloth to give them a soft shine before placing them on the cake.
To create height and whimsy, use different textures of candy some matte, some glossy for a beautiful contrast.

Ingredients:
For the Sauce:
1 medium butternut squash (peeled, seeded, and cubed)
1 small onion, chopped
3 cloves garlic, peeled
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
1 ½ cups unsweetened plant-based milk (almond, oat, or soy)
2 tbsp nutritional yeast (for cheesy flavor)
1 tsp Dijon mustard (optional)
4–5 fresh sage leaves (plus extra for garnish)
For the Pasta:
12 oz pasta of choice (penne, fettuccine, or shells)
Salted water for boiling

Instructions:
1. Roast the Veggies:
Preheat oven to 400°F (200°C).

2. Cook the Pasta:
While veggies roast, cook pasta in salted boiling water according to package instructions. Reserve ½ cup pasta water, then drain and set aside.
3. Make the Sauce:
In a blender, combine roasted squash, onion, garlic, plant milk, nutritional yeast, Dijon mustard, and sage leaves.
Blend until smooth and creamy. Add pasta water if needed to thin. Taste and adjust seasoning.
4. Combine & Heat:
Pour sauce into a pan over low heat. Add cooked pasta and stir to coat evenly.
Heat gently until warmed through.

Garnish with crispy sage leaves, toasted breadcrumbs, or vegan Parmesan.
