Growing indoor under lights. The tomato plants are about 15 inches tall. The huge leaf is an eggplant and the small flowers are eggplants to be.

When the eggs are getting close to done, I turn off the heat, cover them and let them poach for a couple of minutes. As always, I make sure there is enough for Basha. 

Sliced eggplant, sautéed on both sides until soft. I then put a little tomato sauce on each one, topped with some cheese and covered until melted.
Eggplant absorbs oil like crazy, so be careful with how much you use. I had never tried it this way before. Next time I would use an oil sprayer to lessen the amount of oil needed.
I would add some seasoning next time.

Soon will have an exciting crop of herbs, greens, veggies, and more. This is my first year with an indoor “farm,” and I look forward to the results… and the eating.

We’ll see how these mushrooms grow. Two kinds. I’m looking forward to the flavor they will add.

The special treat of lamb will provide many days worth of exciting options for meals. Here I’m having a simple tortilla with lamb and mint jelly.

A simple lamb & beans with pimento and melted cheese.

Talk about incredible eggs. Onion, mushrooms, greens, pimento. Add eggs and cheese, cover until the cheese melts. And a dollop of sour cream when this reaches my plate.

Starting with spring greens, I added tuna, artichoke hearts, some pimento and I have a meal.
