Let go of the limiting thoughts, the cantโs, the self-doubt and negativity.
โจInstead tell yourself that you can, that you deserve it, that you are worthy and capable and that good things are within your reach and on the way. Believe it and when you put those thoughts into the world, that is what is mirrored back to you.
Iโve been doing a lot of manifesting and meditations. I started a challenge with on January 1st, focusing on abundance, gratitude and appreciation. It really alters how you start the day and the energy you feel and receive.
โจYour brain believes what you tell it. So focus on the positive, the abundance in your life and remind yourself of your strength.
โจIt takes nothing out of you to try!! Sending you good thoughts for the start of the week!

This Rainbow Quinoa Salad is the perfect side salad. The quinoa provides all 9 essential amino acids, making it a complete protein, plus itโs a great source of fiber, magnesium, iron and antioxidants. Most importantly it tastes amazing!! Jodi whipped this up for our recent New Year brunch and I canโt stop eating the leftovers!! โค๏ธ
Full recipe is from the nytimes:
- 1 cup quinoa
- 3/4 cup dried fruit
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint
- 1/2 cup chopped parsley
- 1/4 cup each pistachios, almonds, walnuts
Dressing:
- 1/4 cup fresh lemon juice
- 1 small garlic clove chopped or purรฉed
- 1/4 tsp cinnamon
- 1 tsp pomegranate molasses
- 1/2 cup Extra virgin olive oil

People often wonder what to eat before and after a workout. So hereโs the general rule:
โฐ 1-3 Hours Before Your Workout
- Eat a balanced meal with protein, carbs and a little healthy fat for sustained energy.
โฐ 30-60 minutes before your workout
-Grab a light snack with carbs and protein for an energy boost
-Make sure your carbs are easy to digest so as not to feel discomfort while digesting (lower fiber and fat)
-Ex: banana with almond butter, protein shake with some fruit
โฐ 30-60 mins post workout
-This is the most important time to have protein! Exercise, especially strength training, creates tiny tears and protein is essential for muscle repair, helping them grow bigger and stronger. Thatโs why itโs so important to have protein
within this window after a workout.
-Aim for 30-35g of protein per meal. Even include protein in your snacks! Ultimately you want to eat almost a whole pound per ideal body weight each day.

This is a year of different thinking. Really embracing manifesting what I want by putting my dreams and desires into the world and letting the universe take over. Positivity, abundance and focusing on gratitude. Itโs amazing how practicing this in the morning changes the tone of the day and my energy before itโs even begun. Starting the year off with protein and purpose! I donโt make resolutions. But I do make sure my actions are in alignment with my goals. My word for 2025 is FOCUS so starting my day with a super high protein, delicious breakfast fuels both my body and my brain. My to do list is filled with action steps that are results driven, rather than busy work and Iโve also put them on my calendar to keep me accountable. Most important (and often the most challenging items) scheduled first. Happy New year!! Hope itโs off to a great start. โค๏ธ
High protein egg cottage cheese scramble (43g protein!)
1 egg
3 egg whites
1 cup cottage cheese
1 applegate turkey sausage
Veggies
Sprinkle of feta or cheese of choice

Focusing on nutrition when you travel can still be easy (and delicious)! Egg white omelet filled with veggies and a little bit of cheese. I always ask them to cook it without butter or oils. While grain toast - dry, with peanut butter on the side and berries for some extra fiber or even a side salad.
