This sweet potato + lentil stew is loaded with nutrients that support gut health and immunity, exactly what your body craves mid-November.

โœจ Why it works:
Sweet potatoes = rich in beta-carotene (vitamin A)
Lentils = high in fiber and plant-based protein for gut support
Garlic + turmeric + ginger = natural anti-inflammatory and antimicrobial properties
Leafy greens = vitamin C, K, and antioxidants

Immune-Boosting Sweet Potato + Lentil Stew

๐Ÿ“ Recipe:
1 tbsp olive oil
1 yellow onion, chopped
2 cloves garlic, minced
1 tbsp grated ginger
1 tsp ground turmeric
1 large sweet potato, diced
3/4 cup dried red lentils
4 cups vegetable broth
2 cups chopped kale or spinach
Salt and pepper to taste

Instructions:
1. Heat olive oil in a pot over medium heat. Sautรฉ onion until soft.
2. Add garlic, ginger, and turmeric. Cook 1โ€“2 mins.
3. Add sweet potato, lentils, broth. Bring to boil.
4. Reduce to simmer, cover, and cook 20 mins or until lentils and sweet potato are tender.
5. Stir in kale/spinach until wilted. Season to taste.

Optional: Squeeze fresh lemon juice over the top for an added vitamin C boost!

Save this for a cozy, healthy dinner night!
