Tonight's dinner was a cozy, comfort-food kind of night. 🥘💛

Nothing fancy—just a warm, cheesy veggie and rice casserole packed with broccoli, carrots, corn, and plenty of melty cheese. It's one of those simple meals that brings everyone to the table and leaves happy, full bellies.

As a busy mom, these easy, budget-friendly dinners are a lifesaver. ❤️

For dinner the other day we tired this red curry recipe and really enjoyed it. We made a few changes, which I will list below, but I encourage you to give this recipe a try.

Changes from original recipe:
* We used white rice instead of basmati rice (what we had in hand)
* We used tofu instead of chicken (we fried it in a separate pan while the broccoli and spices cooked and then added to the mixture a little before it was all done)
* Instead of using shallots we used a white onion
* Left out the green onion
* Left out the lime juice (just forgot it 😊)
* Left out the cilantro
